I just noticed this online and thought I would post it. I'm on a no baking at home trend and even if I felt like caving.. no butter, flour or sugar on hand. I tried a mug cake a long time ago (from a different site) and didn't really like it. But hey every recipe is different and her site is one of my all time favorites and go to's! I do like the idea of making just a small portion of a dessert since less temptation/leftovers on hand. I'm not even a big cinnamon bun fan but this sounds good about now. www.budgetbytes.com/cinnamon-nut-swirl-mug-cake/

This looks really good, but I am so skeptical of the microwave cakes! Applecrisp, no butter, flour, or sugar in your home!?!?! You are hard-core!

erin -- I tried one of those mug cakes a long time ago. I was curious to try it since I really doubted that it could be good, and it wasn't. It had a weird texture and no way worth the time, ingredients or calories .... But that was just one recipe. I am a big fan of Budgetbytes soooo if I had the butter, flour .......I might give a try just for fun.
By not having flour, butter etc in the house, I can't be tempted to bake something .... and then the baked good sitting on my counter tempting me, ha. Let's just say I'm not one of those that will just take a small piece to sample it. And I'm trying to cut back on added sugar. But I might cave and who knows some flour might make it into my shopping cart. And if I get the white whole wheat then its good for you, right : )
I have gamed the system a few times by making something that uses oats, maple syrup etc.

I've made chocolate mug cakes before when I had a desperate sweet craving. While not spectacular, when topped with plenty of things like ice cream, hot fudge, caramel sauce, whipped cream, etc. they work just fine. You do need to make sure to use a big enough mug though!
I can see I might have to take one for the team and try this one out. It sounds amazing. I may try it a little bit later today even.

Oh boy, friends, this is a dangerous thing to know how to make!
I'm not sure I'd compare it to a cinnamon bun, because the texture is cake, not bread. That being said, it's super delicious. I discovered I was out of powdered sugar, so instead of the glaze I gave the top of the cake a generous squirt of whipped cream. It was perfect just like that. The cake itself is not super sweet, in fact I thought it was just sweet enough. It tasted buttery and cinnamony and the texture was actually much better than the chocolate mug cakes I've had. Not sure why that is?
As I ate it I thought that this would be incredible with some fruit tossed in the mug. Some finely diced peaches, apples or a few berries would give it a cobbler like flavor- maybe a simple scoop of a pie filling in the very bottom of the mug? I didn't add the nuts because I didn't want to go to the trouble of chopping some up.
Only drawback is that this takes two vessels to make- the mug and a separate small bowl to melt the butter in, so you have something extra to wash.
Did I mention it was really good?

This is the only Mug Cake that ever worked for me. It has a good texture.
Peanut Butter Mug Cake ~
1/4 cup flour 1/4 cup sugar 1/4 teaspoon baking powder 1 egg 3 tablespoons peanut butter 3 tablespoons milk 3 tablespoons oil
Combine all ingredients in an over-sized coffee mug, or 2 regular mugs. Whisk until smooth. Microwave on High 1 minute, 45 seconds. You can add 1 teaspoon cocoa for a chocolate version. Or, you can top with, or stir in, chocolate chips. (Don't overcook, or it will become rubbery! All mug cakes should be immediately.)

mrswaz -- Thanks so much for trying it out and the review! So glad you liked it and it wasn't a rubbery cinnamon fail. I'm the same way about omitting some ingredients since I'm not in the mood to chop, pull out out cutting board etc. I think you are the one that first suggested budgetbytes to me --- it was one of my all time favorite sites for recipes so a big thx.
emma -- Thanks for the recipe. I just saved it. I love the idea of a chocolate & PB version.
