I had the Broccoli Pizza (from SmittenKitchen) earlier in the week. Some shortcuts taken since it was a last minute pot luck kind of dinner (we didn't make the bechamel, I think she used a sour cream/garlic/cheese etc etc instead and a few other changes..). It is basically a white sauce pizza, topped with cheese, and broccoli (mixed with lemon, zest, red pepper flakes etc). I knew I would like the pizza since I've had that broccoli (what she calls rubble in other of her recipes, and I can eat that broccoli mixture as is, soooo good). smittenkitchen.com/2017/02/broccoli-pizza/Yesterday I made a one pot Chicken Parm Pasta that was total comfort food.

Hi Applecrisp-I am not a fan of white sauce esp. on my pizza. I am a tomato fan all the way, but I do like S.K.'s broccoli rubble melts quite a bit. Maybe I will make that one of these days for DH and I as a topping on our Saturday pizza night but with red sauce for me. He gets pesto....that's his preference.
Not too much cooking here lately, just pulling out stuff from the freezer. Tonight I had Tomato Bean Ragu that I made from some of our garden staples (tomatoes, basil, and Swiss chard). I used RG Royal Coronas (love those!!!!). DH has a full week of staff appreciation coming up next week where his employer will be bringing in food of some sort every day so he won't eat much for dinner next week and then he goes out of town for a meeting next weekend which means cooking in the next week is all for me! I think I will make a pot of soup this weekend (just bought a butternut squash so my favorite is a caramelized roasted veg. soup with mini turkey meatballs). I also bought a spaghetti squash (winter squash was on sale) so with that I am planning a tomato caprese stuffed squash and that will suit me fine next week.

Yum! I love broccoli on pizza, and I love white sauce on pizza. We have a place that makes a loaded baked potato pizza that also has chopped broccoli on it, and it's my favorite to order.
We moved in August, and our new home has established fruit trees that are just starting to be ready to eat! So we're eating everything apple we can think of while we're waiting for the pears to be a little more ripe. Tomorrow I think I'll bake the first apple pie of the season!
Tonight we had Costco cheese tortellini which I tossed in a super simple cream sauce. I sauteed garlic in olive oil and butter, then pour in about two cups of heavy cream, along with salt and pepper. Whisk and whisk and whisk until the butter is incorporated and the cream is heated through. Toss with the tortellini and sprinkle with Asiago cheese. So simple, so delicious, and so decadent.

Karen -- I've only had a white pizza a few times --- I'm a tomato sauce pizza person too! But this was really good, I think the broccoli topping was great, so that made it too and the white pizza was definitely a nice change from the usual pizza. I think the veggie topping would be good on any kind of pizza.
That roasted veggie soup you are making sounds so good! When you are on your own food wise, you can make all your favorites. Enjoy. Are all your kids in college now?
mrswaz --- A BIG congrats on your new home!! And how fun to have fruit trees --- I can imagine lots of great food coming out of your kitchen.... with an apple theme, and then pears. Your dinner sounds delicious! If you are a big fan of broccoli (and like lemon zest,garlic etc....) and haven't tried already --- I really like smittenkitchen's broccoli rubble farro salad and her broccoli melts.

Still slowly returning to normal appetite and wanting to cook and things sounding good, but there has been some progress! This thread is making me hungry
Yesterday afternoon, I grilled a flank steak (that I had taken out of the freezer over the weekend and so had to be cooked) and some baby bok choy then I drizzled it all with the sauce that I got from the recipe for Sesame-Honey Eggplant (Rachael Ray/applecrisp). It was tasty although I overcooked the meat.
applecrisp, is the pasta an Eating Well recipe?
karen, don't you just love having a freezer stash? I've got to start working on mine since everything is in from the garden now. mrswaz, so jealous of the fruit trees! I made this Easy Pear Cobbler with peaches/amaretto and LOVED it. Still in my to-try folder to make with pears. I also really liked this pear caramel (although it does not look like the picture there). Do you know Marisa McClellan? She has lots of pear recipes and I've made some--all were good. I have tried to can apple pie filling, but it never worked. And I love Art Smith's apple butter recipe. Enjoy!

Applecrisp-Yep, the nest is empty once again. All 3 kids are at school. Took the last one (DD) on Labor Day and got her settled into her dorm. And DS #1 and #2 are both living with their respective girlfriends in off-campus apartments now (YIKES!!!!), but all doing well. DS#1 will graduate in May (cross fingers) but may go on to a 2 yr grad. school program. His girlfriend wants to follow wherever he goes and change jobs, if necessary, so I guess they may be serious! And DS#2 has been with his since she was a Freshman in H.S. and he a sophmore i.e. high school sweethearts. Just as long as any/all "grandchildren" are "legitimate" ones!!!! Besides I am too young to be a grandma (even though my b-day is Monday!!) and they are too young to be parents! Anyway, sorry to get off topic.....
Erin-glad you are beginning to feel better and I hope you keep mending. Sounds like food sounds good to you now at least. That's a start. My freezer stash had gotten pretty low recently so I am working on it again, but it is nice to have. Especially, now that the kids aren't around and I don't have to feed a big family, it's nice to have some nights to be lazy. And with the kids gone, if I make the casserole/lasagna for 8, some inevitably gets frozen since it is just DH and I. Our garden did not do as good as usual this season (too wet) but I still have lots of tomatoes. I made a wonderful creamy roasted tomato basil soup about a week ago. I tried to make it a "full meal" soup by adding some fresh corn, peas, carrots, diced zucchini, fresh cheese tortellini, spinach, and chicken sausage. It turned out really good. Now I just have to remember everything I did!!!! This weekend I am making some caponata with tomatoes and eggplants from the garden.
mrswaz-I am also envious of your fruit trees. We planted apple trees when we built our house 20 years ago. They just became mature enough in the last several years to produce apples. We don't treat them, so the apples are usually pretty gnarly looking but I gather them up to make sauce or pie anyway just cutting away anything that is really nasty looking. Unfortunately, this year we have had a bumper population of squirrels which have been eating everything including the apples that we had on the trees. Grr!

Ooooh, I discovered this summer that my teens actually like farro. I've heard of her broccoli rubble, but haven't tried it yet. DS likes both broccoli and farro, so that salad sounds promising!

I picked a few pears today to check on them and they're definitely not ready yet. Which is good, because it will give me time to play with the apples first. I canned apple pie filling once and really didn't care for it. I'm thinking about picking up some disposable pie pans and making apple pies for the freezer. You can buy them frozen and ready to bake, so it seems to me I should be able to prep them myself. I've frozen already baked pies and they only come out okay after a re-heating, but maybe the raw pie? It's worth a shot anyway.

I'm sorry to hear that you haven't been feeling well -- but so good that you are feeling better and food is sounding better too. Take care! I'll be looking at that Pear Cobbler recipe you mentioned with that erin review! No surprise, I love a good fruit dessert. KarenW -- Happy early bday to you! It must have been a bit of an adjustment to get used to cooking for two once the kids went to school -- let alone getting used to them being away. mrswaz --- I've read a bunch of times of making pies ahead to save time and freezing. I bet there are lots of tips, if you needed online. If you try that SK recipe I hope you all like it (I also made a farro and tomato recipe from SK that I really liked too). I can eat that broccoli mixture recipe right from the bowl as is.

This week I made a Butterneck Squash Chili...it turned out really good but I am not sure I would call it chili...it didn’t have any chili powder in it...

MIght make these Chicken Fajitas over the weekend (saw on twopeasandtheirpod -- but it is from Skinnytaste new cookbook). I like that it is one pan and all made in the oven. I've tried other fajita recipes that cook in the oven and they were just ok. My all time favorite fajita recipe was a suggestion from SallyT and that one is made on the stove top -- would love one that I could just toss in the oven when I want something real easy. www.twopeasandtheirpod.com/chicken-fajitas/
