This recipe is from twopeasandtheirpod and she wrote "Greek Chicken Bowls Are Made With Lemon Oregano Chicken, Rice, Tomatoes, Cucumber, Olives, Feta Cheese, Red Onion, Fresh Herbs, And Finished With Tzatziki Sauce." I probably eat something similar probably 2 or 3 times a month with tweaks based on what I have on hand..... use quinoa or couscous, red peppers in the fridge, sub garbanzo beans for the chicken, top with some greek dressing etc etc .... So I don't really need a recipe, but after seeing her post I decided to make some tzatziki. I also seasoned the grape tomatoes a bit after seeing that in a similar recipe awhile back (I usually just toss in the bowl plain). I don't usually have parsley (and don't buy dill since I wouldn't finish it) but a nice add/flavor. Thanks for posting! I'm hooked on "bowls" for lunches. And, in fact, have leftover pulled chicken in the freezer. Win win!

I've become very fond of rice bowls, you can eat your way around the world = Okinawan Taco Rice Bowl, Carne Asada Rice bowl, Oriental Fried Rice bowl, Walking Tacos, Cuban Black Bean & Rice bowl, and two different Greek Rice bowls. I'm going to improvise a Creole or Cajun Shrimp & Rice bowl soon.

emma --- Same here, I've been having lots of rice (or any grain) bowls for dinner. But I have to up my game in variety -- your list sounds great.
