I made soup for dinner, divided the leftovers into some Pyrex and let it sit out to cool.
Hey I even asked Alexa to remind me with a timer so I could then refrigerate it. Silly me, got the reminder and then managed to forget about it until walking in the kitchen later.
So what time did I finish making the soup, hmm was it out for 2 hours or ??

We all know I push the envelope. If it were left overnight, I'd be worried. An hour here or there, soup gets heated easily to 160+ and would kill anything. That's my story and I'm stickin' to it.

I hate when that happens. This may or may not make you feel better. www.webstaurantstore.com/article/29/following-food-safety-temperatures.htmlI have a small clip on fan that I use to speed up cooling. I open a cabinet door and clip the fan on to the cabinet and set it up to point over the food that needs cooling. And my stove timer is super obnoxious and does not shut off when it reaches the time so it is a good weapon for me to use for remembering to check things that I need to cool before putting away. It is so loud that I can hear it from pretty much anywhere in the house.

I especially hated it wen a very tall guest who had insisted on doing the dinner cleanup, left a pound of jumbo shrimp on top of the refrigerator. The next morning he came to me and innocently asked, "Do you think It should be thrown away?"

I'm with Wallycat on this one....an hour or so left out should not be a problem. I'd eat it! Overnight ... not so much!

Wallycat --- I wasn't sure when I finished making the soup, so not sure exactly how long it was out -- I know it was over an hour, maybe 2, or .... Well I had the soup for dinner.
PattiA -- What a great idea using a fan to cool it down. I usually just transfer the soup/sauce whatever, to smaller containers so it would cool faster and be ready for the fridge/freezer.
Emma -- Huh, on top of the fridge. I could imagine what you must have thought when you saw it there.
Karen -- If it was left overnight, I might consider tossing the storage bowls too. : )
Thx!
