I haven't been in the mood to cook, but this CL recipe for Chicken Gyro Bowls (May 16) sounded great. I might even make it this week rather than rummaging thru the freezer/fridge eating veggie burgers, beyond basic rice and beans, leftover pasta etc. It has some of my all time favorites ...chicken, chickpeas, veggies, tahini, lemon, feta, pita. I can see tweaking it a bit, working with what you have on hand, adding veggies, changing up the grain.... That looks good, applecrisp. I wish someone would make it for me! Sometimes those assembly recipes seem more daunting than cooking recipes--too much assembling This week, I am mostly eating leftovers. These Maple and Chipotle Broiler-Barbecued Chicken Thighs are really good and fairly fast and easy. I didn't have time to let them marinate with the rub on this time around. Plus Mother's Day leftovers, including Best Make-Ahead Recipes' mac and cheese. It came out really good this time and the leftovers are surprisingly better than I thought. Funny about Mother's Day: I attempted to make KA's Berry Tiramisu. Panicked when the cake layers came out really thin and made vanilla cupcakes instead, but after looking at the recipe pictures later, think now that maybe they were fine. I did the soaking (could have done more) and used the cream and berries so it all worked out, except for my panic and being a bit behind that day. Up next, though probably next week, are some chicken and poblano tacos. I am toying with the idea of making a lemon pavlova this weekend. I love the idea of using the yolks in the curd and the whites in the pav--not sure why it tickles me so much!

erin --- Your food always sounds so good, whether it is a big cooking week or not (I'd take those leftovers any day!). Thx for posting the chicken recipe -- I have all the ingredients, well except for the chicken and molasses. Did you use molasses?
And yum to your cooking plans for next week!
I will say my food hardly ever looks like the picture and often tastes differently. For one thing, I often tweak, might leave out ingredients based on what I have/want and typically forego many of the garnishes etc --- and also I don't so gingerly place the ingredients in the bowl or plate. But hey if it tastes good, no complaints.

Thanks, applecrisp! The leftovers were especially good this week I do use the molasses--I have it on hand because I like oven-baked beans--but I would still say you could try it without if you were so inclined. Like you, I sometimes adapt and then wonder "Did I really try this recipe?" My poblano thread popped up here recently--still haven't really used them in recipes--but we did roast them last year and they are still in my freezer so it gives me a leg up on that taco recipe. And my mom has made it twice recently so it comes highly recommended.

Thx for the info. . I know when I make a recipe and often think, well that was good...... uh, well maybe it would have been better if you followed the directions, didn't leave out that extra herb, spice, ingredient. I try not to change up that much, especially the first time, but I often don't want to buy (or perhaps don't like) an ingredient. Or trying to save prep time etc .... That gyro recipe is right up my alley, if I try it, maybe I'll post a picture so we can compare the picture of their bowl to mine. Ha. Nothing cooking for me for awhile....on day 4 of generator power and am actually at work now with my DH using his computers. We had storms in our town last Tuesday (4 tornadoes but those did not hit us. We got the microburst rip through our town from one side to the other at 110 mph). Our town was the worst hit but fortunately my family and house are safe. Our town still looks like a war zone with tons of houses and cars being crushed by trees, trees just ripped out of the ground or in half etc... Scary! I am crossing my fingers that we may get our power back later today or tomorrow. Until then.....no cooking!

O.K. This is getting old....Day # 6 OR is it 7 now without power. But then again, what day is it anyway!! They say maybe midnight today. Meanwhile school is cx'ed again today and tomorrow which means these kids are going to go until the end of June. I just want to cook again!! At our library now....at least I can go online here. Ugh....when will this end. But don't get me wron, I am thankful my family, house etc....is o.k. But hey, I am human, too....I am allowed to whine a bit!

Quick update (not that I mean to hijack this thread) but happy to report power back at 4 AM this morning!!! Got up at 4:45 AM for my daily swim and when I got home from the pool and had breakfast(besides making "real" coffee for the first time in a week!), did 2 loads of laundry, dishwasher, vacuumed, and then went grocery shopping! Ahhh....the simple things!!
