I had a busy month making candy for my small (home) business (Christmas and Valentines orders) so did not get as much cooking done but here is what I can remember: None that I would put in the "excellent" category but all very good/repeatable. Very Good/repeatable: -Muhammara-Mediterranean Vegetarian Cooking -Roasted Carrot Chickpea Harissa Dip-"The First Mess" blog -Herbed Tuscan Bean Stew with (Chicken) Sausage-New York Times -Chicken Potpie with Stuffing crust-C.I. made for DH so he could have his stuffing fix plus used up leftover chopped cooked chicken in freezer -Tuscan Beans with Tomatoes, Sage, and Garlic-Cook's Ill. -"Cioppino"- in quotes as it was far from authentic but that was the name of recipe-Fine Cooking. Tasty either way! -Broccoli Alfredo Stuffed Spaghetti Squash-Katie Lee (Food Network) changed up/reduced the cheeses a bit. Good flavor but may need less milk next time. Squash halves were stuffed really full and got at least 4 filling servings from this as opposed to the 2 listed. -Lemon Vegetable Chicken Soup with pasta-Inspired Taste -Avocado Pea Hummus-good but I am not much of an avocado lover so probably was better than I give it credit for being. Just needed to use it up. -Almond sesame dressing-C.I. -Easy 2 ingredient (No Yeast/No boil) bagels-Skinny taste-Not as good as real McCoy but for the effort involved a very good alternative Tried and True:-Roasted Vegetable Spread-Alton Brown -Creamy Chickpea Tahini Kale Soup-BHG + my modifications -Chicken Rice Black Bean Burrittos Stay warm and watch out for groundhogs!! Excellent
1/3 One-Pan Noodle Bowls (CC Oct&Nov/17) Made with leftover pho broth and beef. And just saw now that it was supposed to be 3 ramen, not 2! Definitely try again with chicken broth/pork. Added a sliced onion with mushrooms and could use more mushrooms.
Make Again
1/16 Cinnamon-Apple Cake (CL 10/97) Very moist. Added some walnuts. 1/14 Quick Tomato Sauce (CI) Good texture—a little sour. Use half or three-quarter pound meat.
Good
1/29 Almond Chocolate Chip Cookies (Bob’s Red Mill) Not bad for a low-sugar, GF cookie. Used butter instead of coconut oil and 2 eggs instead of 1 egg, 2 egg whites. 1/24 Espresso Chocolate Chip Mandelbrot (The Spiced Life) Interesting texture, crisp, not hard. Reduced chips to 1c each. Would have liked nuts, too. Got 3 logs, not 4. 2nd bake needs to be longer. Go back to original KA recipe next time. 1/9 The Bestest Belgian Waffles (food.com/gobluem82) Good regular-milk waffles. Browned very quickly. 1/4 Jam Crumb Cake (Gourmet 12/07) OK coffeecake, but I gave the other jam cakes I’ve made better reviews.
Not for me
1/30 Pasta Shells with Escarole, Sausage, and Cheese (BA 3/03) I just don’t like pastas without sauce, even if they have good flavors.

One of my favorite threads, thanks all. Hmm, what did I eat in Jan? Here's a few... Good/Very good Roasted Squash and Grains with Tahini-Honey BA Kale and Chickpea Grain Bowl with Avocado Dressing CL 1 18 – didn’t follow that closely Amazing Flour less Brownies Skinnytaste -- very good! and great if someone is gluten free. I made a few tweaks by following Sallyt's changes, added 1/2 t of salt and 1 t of vanilla, and upped the oil a bit. I was intrigued to try since they had black beans. IMO you couldn't taste the beans at all. Initially I thought January was just "okay" in the new recipe department, but reviewing my list, it was actually pretty decent. I've been working at freezer/pantry reduction and that's kinda driving what I'm making. Lots of chicken dishes because we had a handful of hand-processed chickens that weren't wrapped properly and were getting freezer burned. I've not been good about tracking hits of misses -- I'm always amazed at the folks who try and track so many recipes. Will never keep up with those of you who do, but I've missed seeing what you all are trying and I'll try to contribute now and then. Couple of new recipes we tried recently that might appeal -- Easy Portuguese Cheese Bread Puffs -- We made this with some grated cheese in a bag we needed to use up --nothing fancy, just store brand with hatch chilies. The base cheese was probably similar to a Monterrey Jack, and that appealed to me more than the feta (not very Portuguese either) and no farmer's cheese to be found, so we used what we had. This is a few ingredients, literally seconds in a blender and then poured into mini muffin tins. Makes 24-30. We had them for weekend brunch but they would be easy to throw together and have with a salad, soup or chili. Easy Corn Souffle -- Another blender magic recipe, this time found after having had a wonderful corn souffle at a restaurant that made me want to try one at home. The restaurant one was, I am certain, prepared in a more traditional manner and was a bit lighter, but we loved the ease and the results of this one. To make it more similar to the one we'd had, I held back a handful of the corn kernels and and the pepper. I also added a bit or red bell pepper with those and then just briefly pulsed them in just to stir them in a bit. Tried and True - Pasta and Bacon with Shredded Brussels Sprouts and Lemon Zest -- we've turned this into a dinner by adding sauteing or grilling some shrimp or chicken and topping it or tossing them in. It will look different that the picture posted - more sprouts and shredded rather than the occasional curled leaf, and any pasta shape can work --we've use cavatappi, orecchiette and others. I have added a bit more lemon juice and this is one of the few times I will add more crushed red pepper than a recipe calls for (1/4 tsp?, but easy to asjust to suit your taste) with that tweak, one of the best ways to enjoy Brussels sprouts, even for someone like DH who swore he hated them. Hi everyone. My name is Brooke. I am a LONG time lurker. I have been doing it for 15 years... back when it was a CL board and I was a single city girl. I now live in the country with my children and I am cooking all the time. One of my NY resolutions was to not be a lurker on this board and to contribute (ie give back)… so here are the things I cooked last month.

brookem -- Looks like a great month! And thanks for posting and welcome! By reading your post it reminds me I should really check out Mels Kitchen (I think that's the name) -- I've heard of the site (and seen it mentioned here) but I don't think I've ever tried anything.
If I want to include the recipe link, I typically just go to the website/blog... look up the recipe, and then copy the info in the search bar at the top of the screen, and paste that into my post.
Don't hesitate to join in, ask a question, post a recipe, whatever you want.
