Thank you for posting this! What an interesting read. I've got my 8-quart IP in use right now. I PC'd last night's rotisserie chicken carcass with today's turkey neck & giblets, after filling it 2/3 full with water. After the pressure came down, I changed it to "saute-high" and topped off with water (maybe 12 c?) to about 1" from the top, with the clear glass lid. After it got nice & hot, I changed it to "slow cook-high" & it'll go all day, forming a huge amount of fresh, rich stock that I can use to make turkey gravy this afternoon.

Love my IP! I want to buy a 6-quart for my son & new DIL for part of their Xmas, but I'm wondering where the best price will be. I doubt it'll hit $49.95 again as it did when the frenzy got launched during that Amazon Prime Day in 2016 (or 2015?).
