Last night I made Steam-Roasted Potatoes from my latest FC. Great result. Crispy on the outside and soft on the inside. Recipe supposedly serves 4 but we polished it all off. First you cover the pan with foil and roast lightly oiled and salted potato wedges at 425°. Then you remove foil and roast another 20-30 minutes, flipping potatoes once. Pretty effortless in my book. After roasting, potatoes were sprinkled with one teaspoon each of dried oregano and grated lemon peel. Next time I'll increase those amounts, especially the lemon peel. You can also season with rosemary & Parmesan or garlic & fresh mint. Can't wait to try the other recipes for steam roasting such as carrots, cauliflower and mixed root vegetables.

I almost always roast my potatoes that way, but I season before I put them in the oven. I put the oil and spices in a ziplock bag to coat them, then put in the oven covered (or in the microwave to save time) and then in the oven uncovered. In the summer I do them the same way on the grill. i don't follow a recipe, just use what spices I feel like at the time.
