I hit my 1 recipe per week mark so it was an OK month.
3/10 Chicken Enchilada Skillet (Delish) Eh—fine, but needed more spices.
3/18 Chinese-Style Barbecued Ribs (ATK) Good, but not amazing. Needed a bit of something. Lime? I did use low-sod soy and forgot the sesame oil so maybe it was me. Good method though—wonder if it would work for regular BBQ.
3/25 Spicy Baked Pasta With Cheddar and Broccoli Rabe (BA 2/2020) Even though I messed this up it was good! Forgot to save pasta water so I used chicken broth. Used regular broccoli that I blanched for 2 min. Increase broccoli and decrease pasta?
3/27 Carrot Cake Baked Oatmeal (2 Peas and Their Pod) Good, but I bet it would be better with glaze. And I think I prefer my oatmeal with nuts added later. They lose their crispness baked. But, breakfast with vegetables!

Erin, that oatmeal carrot cake looks incredible. Thanks! I've been making a lot of repeat meals, so nothing "wow" to report...well, the meals I've made were a wow to us, but I've no doubt posted them here before.
Editing...I made Mapo eggplant from Thewoksoflife and it was SOOOOOOOO good!
