Some notes:
*Don’t overcook the syrup mixture. As soon as it reaches a full boil, mix in the vanilla and cornflakes, and scoop out the cookies.
*I make these smaller, a rounded tablespoon each; they are rich
*Once you scoop them out, while they are still warm you can reshape them easily
*A nonstick pot isn’t essential but makes it easy to get all of the mixture out of the pot.

Croissant French Toast Casserole – sweetandsavorymeals.com. The croissants were a problem for me; I think a studier bread would be better. Also, texture was a bit soupy and spongy.
