I first found this on Delish but couldn't open the recipe because of some account issues. But I did find the same recipe on the Recipe Runner website.
DW and I both found this to be notch, with her saying: "I really like this".
Cranberry Apple Quinoa Salad
This Cranberry Apple Quinoa Salad is full of crunchy texture and pops of sweetness from the apple and dried cranberries!
Salad 1 cup uncooked quinoa 1/2 cup diced celery 2 green onions, sliced 1 cup diced apple 1/3 cup toasted pecans, chopped 1/3 cup dried cranberries
Vinaigrette 2 tablespoons apple cider vinegar 1 tablespoon honey or maple syrup 1 tablespoon olive oil 2 teaspoons dijon mustard 1/4 teaspoon granulated garlic Kosher salt and fresh ground black pepper to taste
Cook the quinoa according to the package instructions adding a little salt to the water. Once the quinoa is cooked let it cool to room temperature.
While the quinoa cools add all of the vinaigrette ingredients to a small bowl or jar with a lid. Whisk or shake until combined.
Once the quinoa has cooled pour it into a serving bowl along with the remaining salad ingredients. Season with salt and pepper. Pour the vinaigrette over the salad and stir everything together until combined. Taste for seasoning, then serve or refrigerate until ready to serve.
Notes If you plan to make the salad ahead, omit the pecans until ready to serve so that they stay crunchy.

Thank you for telling us. (Not sure what NOTCH means...but must be TOP NOTCH...it sure sounds good. Can't wait to try. We are very much into all those ingredients except haven't tried Quinoa much...so I'm excited to get this from you!!! (We have been making apple salad almost every night...but without onions and quinoa...and with mayo. My husband is thrilled that he has found a pleasant way to get me to eat apples. NOW, if we could add quinoa...imagine the happiness that will be celebrated here. PS: Which recipe did you actually make? The one at Delish has kale and the other does not. THANKS!! Catbatty

This sounds so good! I've been making soup for lunch for a while and Im getting tired of my usual ones. going to test this salad for lunch today along with a smaller portion of the soup we arent liking that much. Thanks. I love quinoa and the dressing is similar to a favorite one of mine.

PS: Which recipe did you actually make? The one at Delish has kale and the other does not. THANKS!! Catbatty I did not use any kale. The Delish recipe didn't include diced celery but the one I made did and I think it was better because of the extra crunch. Richard

I tried it and liked it a lot. felt it was more appropriate for warmer weather. I didnt use kale but would add it if I had some. I used walnuts and fewer cranberries. I dont like a lot of those.
