It was a good month. I am hiding from the trick or treaters this year by going to an exercise class! Sorry, kids.
10/8 Frosted Apple-Cinnamon Oat Cake (Everyday Cake) Good, but chewy because I did not blitz oats. Just did cc frosting not recipe frosting.
10/14 Sheetpan Vegetable Lasagna (Southern Living 7/21) Very tasty. Cut zucchini regularly and thin. Used less sauce—jar was only 24oz.
10/14 Apple Cider Doughnut Cake (BA 9/20) Very good. Try as muffins or mini loafs to get more cinnamon sugar.
10/16 Peanut Butter Hot Fudge (Sundaes; NYT) Delicious and easy. Used TJ’s dark choc chips and it was fine—no grainyness.
10/21 Blueberry-Glazed Ribs (F&W 8/2010) Used Perfect Blueberry Syrup (same issue). Good, but I don’t need to repeat unless we have a bumper crop again some year. Different w/o tomato. Agrodolce.

Erin, we get no kids here so I've stopped buying candy. I'll see if I can find that sheetpan lasagna. Update...found it: www.southernliving.com/recipes/sheet-pan-vegetable-lasagna YUM!! Last night, I made a riff on Paneer Bhurji using tofu from Bon Appetit (www.bonappetit.com/recipe/spicy-tofu-scramble-with-tomato-and-ginger-recipe) that turned out much better than I thought it would. A repeater!

Winner: One night I didn't have any dinner planned so I scrounged around and found a frozen bag of riced cauliflower. Then I searched for a cauliflower soup recipe and found this: www.saltandlavender.com/creamy-cauliflower-soup/. While I had to tweak it a bit (riced cauliflower vs fresh, no heavy cream so I used whole milk, added potato flakes to thicken it), it was delicious and I would love to make it again with an actual head of cauliflower. Served it with Krusteaz corn muffins and DH absolutely loved the meal. Disappointment:I made the Black Bean Salsa Chili from Cooking Light that we have always loved since finding it on this board, but it just wasn't as good as we remembered. I did use left over meatloaf instead of ground beef (don't tell DH), but otherwise made it as directed. We liked it well enough to eat the leftovers the next night but it just wasn't as delicious as we remembered. I'm guessing it was the salsa although I don't recall what brand I used previously.
