I ate good in May. Those chicken meatballs are four stars good.

5/8 Chicken Parmesan Meatballs (CC 8&9/21) SO good and make ahead.

5/30 Sheet-Pan Baked Feta with Broccolini, Tomatoes, and Feta (NYT) As appetizer on pita. Very tasty. Sandwich filling, anything. Try with halloumi?
5/24 Gooey Layered Everything Bars (MS) I don’t even like coconut and these were good. Used semi, dark, toffee chips, walnuts, no raisins. Did not scrape out cond milk; just covered top with coconut—a little less than 7oz.
5/22 Roast Chicken with Schmaltzy Cabbage (SK) This was really delicious. The cabbage is the star of the show, but even the chicken was tasty. Salted it and let it sit in the fridge to dry out for a few hours.

5/30 Rhubarb Cheesecake Dessert (Taste of Home) Quite tasty, but I wanted more of a strawberry/pretzel salad filling. Doubled rhubarb mixture based on reviews. Liked crust with vanilla. Maybe make in smaller pan?
5/22 Brown Sugar Peach Cobbler for Two (BettyCrocker.com) Good biscuits. I think my peaches had been in the freezer too long though.
5/16 Handsome Hog’s Chopped Salad (EW Jul/Aug 2020) Did more the idea of this salad zhooshed up—added cumin, lime, chili powder to dressing; used black beans; croutons good! Forgot cabbage.
5/10 Crispy Fried Shrimp (CC Feb/Mar 2021) Good, but not better than regular breaded shrimp.
5/8 Easy Chocolate Tiramisu (Serious Eats) This was tasty, esp the chocolate whipped cream, but was missing something. Salt? Maybe a bit more sweetness and a little less liquid?
5/8 Super-Size Turkey Meatballs with Spinach and Cheese (RR F/M 2006) Good, but needed something. More salt? Acid?

Erin, Your month looks tasty! I am going to try those chicken parmesan meatballs. They look really good! Thanks!!! Unfortunately, I have not been keeping track lately but maybe I'll do better next month!
