I say I don't like tomato soup, but I think what I don't like is condensed tomato soup! I'd make the meatball soup again in a heartbeat and I have taken to calling it pizza soup.

11/21 Sausage Meatball Soup (thekitchn) Made before but can find no entry. Easy and very adaptable. Sauteed onions, mushrooms, peppers. Used Field Roast vegan sausage and regular. Top with Parm or mozz and serve with garlic toast—delish. (orig 2/21!)

11/25 Carrot Potato Soup (thedevilwearsparsley) A simple, vegan, pantry soup that turned out much better than expected! I basically changed spices. Increased veggie stock to 32oz, added 1 tsp garam masala, and 3/4 tsp turmeric.
11/21 Dutch Apple Pie (Best Recipe) Completely make-ahead and all parts separate. Tasty, but?
11/19 Apricot Almond Baked Oatmeal (food52) Reduced fruit and nuts to 1 c each and still a little too much. This was tasty, but not something I would make again.
11/8 Cherry-Lime Margarita (FNM 5/20) Used cranberry instead. Still want to try with cherry.
11/8 Jellied Cranberry Sauce (CI 11&12/21) I missed the bits of berry. Would be great with whipped cream and pecans or pretzels 😊
11/8 Scallion-Cheddar Cornbread Stuffing (NYT) There always seems to be something missing, but this was pretty close. 11/21 Made in a cast iron skillet—better crunchiness. I might make this again.
11/8 Roasted Butternut Squash Salad with Creamy Tahini Dressing (CC 9/21) Should have been a party in your mouth and it was good, but not great.
11/1 Sweet Potato Snickerdoodles (thekitchn) No real sweet potato flavor. Tasty, big, pretty cookie.

I am guilty of not tracking anymore but I can report on what I made for Thanksgiving and since that time. And looking at my list I think I did most of my cooking this month in the last week or so!!!
Excellent to Very Good: -Grilled Mahi Mahi with Zhoug-my adaptation of a recipe from Milk Street Kitchen (MSK) Mediterranean Cookbook -Roasted Vegetables with Cilantro Yogurt-MSK -Roasted Butternut Squash, Shallots, and Chickpeas with Tahini Sauce and Toasted Pepitas-MSK -Mujadarra-also MSK made with lentils and bulgur instead of the usual lentils and rice. Excellent but must be careful not to overcook or the bulgur could easily make it mushy. Mine was just shy of being done when I pulled it off the stove to let it finish in the residual heat of the pot and turned out perfect. -Sweet Potato and Butternut squash "noodleless" Lasagna-Made this up to use the leftover butternut squash from the recipe above and the last 2 small sweet potatoes I bought from a 5# box and was very good. I sliced the squash and potatoes thinly on my mandoline and layered with a turkey sausage meat sauce, ricotta filling, cheese, and kale. Worked perfectly! -Biscoff Pumpkin Cheesecake Pie-Two peas and their Pod blog -Galaktoboureko-My Greek Dish and Diane Kochilas recipes -Chocolate Biscotti with Almonds, Pistachios, and Dried Cherries-MSK but I left out the cherries and pistachios since I'm not a fan of either and there was still plenty of "stuff" in them. Also the best chocolate biscotti I have tried. -Cheesy Crispy Pan Pizza-King Arthur Flour-YUM! -Fluffy Cinnamon Rolls-King Arthur Flour using Tangzhong
Tried and True: -African Chicken Peanut Soup-my adaptation of old CL recipe -Vegetarian 3 bean Chili-Joanne Chang -Sweet Potato Hummus-Cook's Iluustrated -Curried Sweet Potato latkes -Pizza with Sweet Potato Crust-topped with tomato sauce, broccoli rabe, chicken sausage, and cheese-Food Network -Pozole Verde with Chicken-I did 2 recipes, one was from Bon Appetit and the other Epicurious. both excellent. I still have another 4 # tomatillos in the freezer to go through!!

Still adjusting to the new job so I've been relying on easy, throw together meals. Which means it was a slow and kind of boring month here...
