We love our new 6 qt Instant Pot! Bought it at Costco.
It has no “Manual” button but I think that the Pressure button is the same thing. The few meals we have done so far turned out great.
My question is about the “Sous Vide” button. Not sure what to do with it. The small manual that came with the IP, mentions “Sous Vide” to use with bagged food. Is this correct? Does anybody use this feature? If so, what is your experience?

I've heard about sous vide with the Instant Pot but have no clue how it would work because I thought you had to have circulation of the liquid in some way. Maybe the Instant Pot website has more info than your book.
You are correct that the Pressure button is the equivalent of the Manual one on some older models

I cook sous vide quite a bit. I have an anova sous vide immersion heater that I use but my instant pot does not have the sous vide function. Sous vide just provides a constant water temp for bagged food to cook in. Works best with proteins (steak especially) to cook them to desired doneness by setting the end temperature you want the meat to be at (140 f for medium). Then when done just sear the outside if desired, or like with ribeyes, don't sear it and you can have a single serving of prime rib roast. There are MANY videos about cooking sous vide on youtube. Check them out.
