Another month of 2017 gone!
Excellent
8/18 Easy Pear Cobbler (CL 1/00&TraceyK CLBB) With peaches and amaretto: amazing!
Make Again
8/23 Broiled Fish with Lemon Curry Butter (NYT Feb 2017) Cod, dried thyme. Cover pan with foil.
8/13 Almond-Crisped Peaches (SK) These were fine, but I would definitely make them again. Easy GF dessert—make on tray or something that can be broiled. Serve warm with a big scoop of ice cream.
8/11 Beef Stir-Fry with Bell Peppers and Black Pepper (ATK) I’d reduce black pepper to take away a bit of the burn, but sauce was good overall. Used pork.
8/8 Chocolate Zucchini Bread (twopeasandtheirpod/SallyT) Very good—use less chips. Bake in smaller loaf pan.
8/4 Strawberry Pretzel Salad (CC 8&9/13) Good—wanted it to be a little saltier and a little sweeter.
Good
8/30 Pan-Seared Eggplant with Buttermilk Dressing (BA 9/17) Good, but I held back and am not sure I should have. Also had to make a half recipe.
8/29 Kofta Kebabs (AllRecipes Magazine summer 16) Good—not as spicy as I thought given all the spices. Nice warmth—cinnamon dominant with coriander background. Pan fried as patties.
OK
8/8 Thai Pork Noodle Bowl (dashrecipes 9/14) I should make this again as the pork chops were good, but, as I thought, 1c water was waaaay too much for peanut sauce—bland and watery.

I always love this thread- - so fun to read what's cooking (and of course get great ideas). I didn't keep track, so here's a few... Black Bean and Pepper Salad with Cilantro and Lime --- soo good,, kalynskithcen Mexican Shredded Chicken . www.recipetineats.com/mexican-shredded-chicken/ very good, I cut way back on the chipotle in adobo, I think she said use five! She does suggest the extra step of browning the chicken after it is cooked, made an extra pan to clean, and might not have browned it enough to make worthwhile. I froze leftovers -- hope they are good too. Spnach and Cheese Strat/smittenkitchen -- a really good make ahead dish. Corn, Avocado and Tomato Salad Poor Man's Burrito Bowl/budgetbytes --- beyond simple, great when in no mood to cook, took minutes to make.
