Yeah I guess the description says it all. I am from the southwest and my food preferences are still rooted there even though I have lived in a suburb of Washington, DC for the past 64 years. ok, a good tamale helps but I know I'm going to need a cheese enchilada sometime soon.

Drier cheeses have zero to a tiny amount of lactose....dry mexican cheese, feta, sharp cheddar, and on and on....you can still have the enchilada!
If you get desperate for dairy, you can take over the counter lactase enzymes (similar to beano but different enzyme--same company) and enjoy.

My sister is lactose intolerant and does eat the occasional cheesecake or ice cream, but she takes lactose pills. You might want to try those on to see if it helps. She buys the Kirkland brand and says they work as well as the Lactaid brand, and much cheaper.

Are Cabot brand cheeses sold where you are? Some of their aged cheeses are lactose-free or very low lactose. I think strained or Greek yogurt might be a better choice since the whey is strained off. I remember being surprised at which cheeses/dairy products a lactose-free client could eat. I don't remember all the details. It might not be as bad as you think it will be. I had to use Lactaid milk in her food, but there were many cheeses that she ate regularly.

I have no info (except for sympathy!) on the cheese dilemma, but have you tried FairLife milk? It's lactose-free. I'm beginning to wonder if DH is developing some level of lactose intolerance; he enjoys cheese & ice cream w/ no problem but regular milk does NOT agree with him. FairLife is no problem.

Green Valley Lactose Free Yogurt and Kefir are also good. I used them them a few years ago when I was trying a low FODMAP diet to resolve some gastro issues.
