Of course I could go the banana bread or muffin route or just toss them in the freezer with the others for smoothies etc. I might make some banana "ice cream" -- no way way the real thing, but if you want something cold, and kind of ice cream like (and so much better for you) .....
I was just wondering if anyone had any other ideas. Ooooh, and if it uses oats (doesn't have to) bonus points since I have a big Mason jar full.

I just made some energy balls this week that used 2 bananas. Off top of my head, mix 2 c. oats, 2 mashed ripe bananas. 1/4 c. almond butter or peanut butter, 1/4 c. honey or maple syrup, 1/2 t. cinnamon, and 2 T. (or more!!) mini chocolate chips. Roll into balls and chill. These are very amenable to variations as well. Add some coconut (I don't care for coconut). flaxmeal, chia (another I can't wrap my taste buds around!!), ground/chopped nuts etc.... You could also dip them in chocolate or roll in a coating. When I made them, I used maple syrup and they were very soft/sticky so I rolled them in a mixture of ground graham crackers and bran cereal. They stayed perfect this way and were not sticky to hold. I stuck them in the freezer to snack on. I also used more chocolate chips. Honey might make them less soft or just cut back and use only 2 T. liquid sweetener. Play with it!!
Other banana ideas: I make peanut butter banana oatmeal snack/granola bars; banana pancakes; banana cake; muffins (as you already mentioned but I love muffins with bananas so I have a lot of them!!); stuffed french toast, bread pudding etc....

Do what I do. Stick them in the freezer, vowing to make bread or pancakes or muffins or smoothies. Forget about them. Move them aside later to make room for the next batch of overripe bananas; repeat ad infinitum. Once in awhile, actually use them for baking.

I like sliced bananas, strawberries and blueberries in a bowl, topped with sour cream or yogurt on a hot Summer's day for lunch.
Frozen bananas on popsicle sticks dipped in melted chocolate and sprinkled with nuts, coconut or sprinkles.
Fruit s'mores. Sandwich a slice of banana, a slice of strawberry, a marshmallow, and a square of Hershey's milk chocolate between graham crackers. Nuke until melted.
Bananas Foster or banana trifle is another way to go. There's always a banana split.

Saute in butter; when soft sprinkle with brown sugar and serve over waffles, or ice cream, or just grab a spoon.

I like sliced bananas in fruit salad and tossed with lime yogurt. any combo of other fruit. a sprinkle of toasted almonds on top is good.

Thanks everyone for all the great ideas. The bananas are still on the counter ripening a bit more. And testkitchen we must have the same "recipe" ..... I've done whar you did more than a few times........ Do what I do. Stick them in the freezer, vowing to make bread or pancakes or muffins or smoothies. Forget about them. Move them aside later to make room for the next batch of overripe bananas; repeat ad infinitum. Once in awhile, actually use them for baking. Again thx for the wonderful ideas. I so wouldn't mind trying the ideas, might need to remember to keep bananas on the shopping list.

If they fall out of the freezer and land on your foot, it's very painful. I have a friend who peels hers and puts them in a baggie. Myself, I've always risked my feet and my husband's irritation.

My DH just read that hummingbirds LOVE ripe bananas as their protein source. Get a net/bag of some sort and hang them out for the hummers!
