I am done cooking new this month. Leftovers today and tomorrow and I need a little break from work so I thought I would post.
Excellent
5/29 Strawberry Dream Cake (CC June/July 2011) Really excellent cake. Not strong strawberry flavor, but def there. Very nice texture. Great frosting. Not too sweet.
5/14 Pineapple Orange Margarita (BA 7/00) Reduced tequila to 1c. Excellent! Not too sweet, not too sour. Blended with ice.
Make Again
5/14 Roasted Red Pepper and Cannellini Bean Dip (CL 1/07) Roasted two peppers, nudged up salt, balsamic, basil. Very tasty!
5/14 Broccolini and Ricotta Pasta (RR 12/15) So good for so few ingredients. Just used TJ’s parm/rom blend.
5/14 Creamy Baked Penne and Chicken with Mushrooms and Creamy Baked Penne and Chicken with Artichokes, Tarragon, and Lemon (Best Make-Ahead) 2 days in fridge. Watch when chicken is cooking to not boil. Good flavor—forgot lemon juice and peas in second! Do 10-12 oz artichokes only. Frozen is best.
5/13 Singapore Noodles (ATK) Good, a little fussy and messy. Do shrimp and veg together and egg separate? Taste/brand of curry powder really decides flavor.
5/13 Cranberry Sour Cream Pound Cake (CCOct/Nov 15) Good, dense without being heavy. Could do any berry.
5/10 Buttermilk Pancakes (CC June/July 2015) Fluffy and still cooked through. Forgot sour cream! 5/? Redid with sc and not as good--didn't cook through. I don't know which one was the cook's error.
5/7 Cannoli Pound Cake (SK) Made Friday and ate Sunday and it was still moist! Not sure I need pistachios; maybe toast them? Cut them smaller?

5/28 Veggie Balls NYT/The Meatball Shop Without marinara, nutty and interesting. Marinara just evened everything out, but you really don’t want to eat them dry, so?
5/26 Glazed Cinnamon Oatmeal Cookies (Savuer 4/13) Overbaked a tad. Messed up glaze. Tasty, regular oatmeal cookie. Flavor grew on me as they sat and doing glaze correctly would be good.

5/25 Lamb and Spinach Curry (Oprah 10/09) Bland. Was done before 4 hours on high. Added 6oz spinach.
5/22 Cod with Broccolini and Chilli (Nigellissima) This was fine. Nothing great.

So wonderful, Erin. THIS is one of my most favorite features that users started doing back in the CL forum in days of old and you do it so well. I read some of them to my husband aloud (while he works out on the exercise bike) to give him an idea of why I rave about this thing people are still doing in Great Food! Please keep them coming. I would PAY for these!!!!!!! I can't express it enough how fun and what treasures these are to many of us!!!! THANK YOU, ERIN and THANK YOU TO ALL WHO SHARE THESE LISTS WITH US!! <shouting> PS: Folks who do this or want to do this: don't think you have to be perfect. From what I can remember:
Very Good:
Parmesan Crusted Baked Tilapia with homemade tartar sauce-CL
Pita pizzas-me. Used my homemade pita and made my own turkey Italian sausage. Also topped with a saute of broccollini, baby kale, lemon, goat cheese, and pizza sauce.
Banana Nut Oatmeal Bites-A no bake "power ball" with oats, bananas, peanut/almond butter, maple syrup, cinnamon, and chocolate chips.
Good: Istrian Minestrone-Martha Rose Schulman. Would have like more of a tomato presence and stronger herb flavor. Herbs were cooked with the beans. Next time I would reserve some to add fresh to finished pot. But still hearty and tasty.
Tried and True: Spinach artichoke chicken calzones-Giada with my modifications
Deviled Salmon cakes-??
Can't remember anything else. With my sinus surgery, guess I did not cook as much this month.

Tonight was steamed chicken and veggie dumplings from the freezer case of our local Korean mega-supermarket, plus seaweed salad from their deli case.

Helene -- Yes that's the one. I first tried it years ago after reading about it on the old CLBB. I think it is super flexible and often change it up (ie roasted corn is good, sometimes toss in leftover chicken, use less out, leave out the cheese etc). I always leave out the jicama and radishes, and usually the jalapenos (since total heat wimp and don't often buy). If you try it, hope you enjoy.

I'm also a heat wimp. Well drained, pickled jalapenos from a jar, chopped to measure same amount does the trick for me. Trust me, that jar lasts forever in the fridge. Just make sure the jar doesn't accidentally topple over. That was a nasty cleanup.

The stuffed shells sound terrific and a great way to use summer veggies. I did pop onto your blog and I read your suggestion to use penne etc instead of shells. I love that idea -- one, I don't have shells, and if I buy them, not stuck with a leftover shells. And, even better --- a time saver since no need to stuff any shells. I wonder how much pasta to use (maybe I'll try the whole 2 ounce dry/serving). I can't wait to give it a try. On my list it goes. Off topic... I was going to post on your blog but it said I had to sign in. So it says use your google account.... is that just a gmail email address? I don't have one, really should just get one. Applecrisp - Thanks for stopping by the blog! I'm embarrassed to admit, that I'm not 100% certain how all these on-line things are interlinked. I created my blog almost 10 years ago (where has the time gone?!?) and I know the whole Google world has morphed quite a bit since then. When in doubt, I plug my email addy in and if it starts to create something I don't want to create, I back out. Sorry I can't be more help! As for the stuffed shells, I had enough "filling" to make nearly two pans. Personally, I like to make less pasta so I'm not stuck with leftovers cooked pasta - easy enough to make more if I need it. But that's me. Cheers!
