just made PattiA's Chicken, apple, and cheddar quesadillas - from years ago - DELICIOUS!
Chicken Cheddar and Apple Quesadillas Recipe By :Patti Anastasia Serving Size : 6 Preparation Time :0:00 Categories :
Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 flour tortillas -- (8-inch) 6 ounces cheddar cheese -- shredded 2 boneless, skinless chicken breast halves -- grilled or poached, and shredded 2 apples -- thinly sliced 1 tablespoon chopped fresh thyme -- or 1 teaspoon dried thyme olive oil spray
Place tortillas flat on a work surface. Fold each tortilla in half, press down to make a crease, open tortillas. Sprinkle cheese over half of each tortilla; top cheese with chicken and apple slices. Sprinkle with thyme. Fold tortillas in half. Press down on each.
Coat a large nonstick skillet with cooking spray, heat skillet over medium heat. Place 2 quesadillas in the pan, and top quesadillas with a cast-iron or other heavy skillet. Cook 1 1/2-2 minutes on each side or until tortillas are crisp and lightly browned (leave cast-iron skillet on quesadillas as they cook). Remove quesadillas from pan; set aside, and keep warm. Repeat procedure with the remaining quesadillas. Cut each quesadilla into wedges.

Sally, thx for posting that recipe, its new to me! Patti's recipe sounds so good, and perfect for a busy day.
I've made something similar but it had chicken, cheddar, apple and some honey mustard which I also thought was a good combo.
I will certainly give it a try the next time I have tortillas.
When saving the recipe, I saw this one, so thought I would post it. I don't measure any of it (and use less cheese, or at least that's what I'm claiming!), sub whole wheat tortillas. and often change up the ingredients..
Grilled Chicken and Spinach Quesadillas
Serves 4
Ingredients 1 2- to 2 1/2-pound rotisserie chicken, meat shredded 4 cups baby spinach (about 3 ounces) 1 1/2 cups grated Monterey Jack (6 ounces) 4 large flour tortillas 1 avocado, diced 1/2 cup store-bought fresh salsa 1/4 cup sour cream
Directions 1. Heat grill to medium. In a large bowl, combine the chicken, spinach, and cheese. 2. Dividing evenly, place the mixture on one half of each tortilla. Fold over the other half to cover. 3. Grill the quesadillas until the cheese has melted and the tortillas are crisp, 3 to 4 minutes per side. 4. Serve quesadillas with the avocado, salsa, and sour cream.
