I thought I had missed the thread, but realized one hadn't been started yet! Another good month. I've been exploring my new "favorite" source The Food Lab/Serious Eats. I'm finding it similar to ATK, but not as pretentious. Mind, I do enjoy ATK, but Serious Eats has a fun sense of humor that comes across in their posts. Creamy Chicken Wild Rice Casserole (Ckng Lght, March 2017) Putsy, but good. Made a 9x13 pan. Slow Cooked 15 Bean Soup (modified from ATK Slow Cooker Revolution) Very good - I forgot to add the greens and it didn't really need it. Beefless Stew (Straight Up Food via Pinterest) This was very tasty! Gluten free, vegan, makes a bunch and would freeze well! Tempeh Rubens (Ckng Lght/All Recipes) This was a repeat recipe. Just as good the second time round. Salmon Chowder (The Food Lab/Serious Eats) I'll be making this again! Pasta with Butnut Squash, Browned Butter and Sage (Food Lab/Serious Eats) This needs the "good" pasta, not Creamette, but I had bought the Creamette and only found the "good" pasta later and didn't want to spend the money on more pasta. Mexican Butternut Squash (Food Lab/Serious Eats) While not a "Fail", not a success either and this was entirely my fault because I misread the recipe. Planning on trying again this weekend. Baked Eggs with Creamy Greens (Food Lab/Seriously Eats) Creamy eggy goodness in a pan. Slow Cooked BBQ Beef Stuffed Potatoes (Ckng Lght Jan/Feb 2017) Ckng Lght did two really similar recipes nearly two months apart. This recipe was so easy - chop, plop, wrap, walk away. Varaile, Thx for starting, the monthly hits and misses is always a favorite. Your recipes sound great, certainly will be checking out some. And thanks for the serious eats suggestion too -- no doubt I will be bookmarking that one. My dressing didn't seem that creamy/well mixed, bet it is because wanted to save cleanup and mixed in bowl not blender, and it was a bit strong from the garlic next day, perhaps I added too much garlic. Bookmarked some good looking recipes above. Thanks guys. Sadly, I did not keep track very well this month so I don't have much to contribute tonight. And right now my brain is mashed potatoes after spending the morning at Sunday school trying to teach a bunch of 2nd and 3rd graders so I can't recall much at the moment. Try to do a better job this month!

I love seeing everyone's lists A light month for me, but if it at all interests you, try the banana/chocolate chip cake. It is just the perfect little sweet treat. And the new mom I took the cookies to asked for the recipe so she could make them herself so that is a recommendation! The title is misleading. They are cranberry-chocolate chip-pecan-oatmeal or cherry-chocolate chip-pecan-oatmeal cookies. Make Again 3/8 Oatmeal Cookies (ATK) Chewy, crispy. Excellent method. Reduced cran and choc to 3.75oz each. Could reduce even a bit more. 3/4 Chocolate Chip-Banana Snack Cake (BHG) Good everyday cake. Easy and tasty. 3/4 24-Hour Omelet with Sun-Dried Tomatoes and Mozzarella (Best Make-Ahead) Nice flavor combo, balanced. Bake a tad longer? Almost overflowed dish. Try other variations. OK 3/26 Good Morning Sunshine Bars (CulinaryintheDesert) Too sweet! But one of those things that you have to keep eating once you start. 3/25 Mississippi Mud Bars (Ghiradelli) Was worried I would have to scrap these and start over, but they were edible and decent. Such a pain I wouldn’t make them again, though most of that was probably baker's tiredness

Thanks for mentioning this cake. I love snack cakes, they're just the right size for us, and I seem to always have ripe bananas to use up.

Andrea, Wow, what a list. So glad to see that you are feeling better and back in the kitchen doing what you enjoy! Lots of great sounding recipes, I will start by looking up that Roasted Chickpea, Avocado and Feta salad. Impossible for me not to look up that one given the title. Just make sure the chickpeas get crunchy. I didn't roast mine quite long enough, and they ended up a bit chewy.

I made the snack cake again this week (used sour cream thinned with a bit of milk for the buttermilk). People cut polite pieces and then all went back for seconds And I forgot this recipe from March: Good 3/22 Salsa Verde Ranch Wings (homesicktexan) Good salsa verde ranch—cooked wings plain then tossed w/ ranch and baked 10 more minutes. Leftover sauce was good on tacos and might be good on its own as a salad dressing.
