I often buy two or three lemons to have on hand for juice...rather than bottled juice... or yest but then I end up having partial lemons that don't get used before spoiling. Maybe I could juice the lemons when new and save in the refrigerator for later use. Has anyone tried that? How long will the juice keep if stored in an airtight container? Just wondering. Real lemon juice is so much better than bottled.

In a pinch, when I buy too many lemons, I freeze. There is some deterioration in flavor, but not huge that it ever significantly affected a final dish. If I have already juiced the lemons, I freeze in an ice cube tray (~1-2 T. per cube). That way i just pop out how ever many cubes I need. I also have frozen lemons without juicing. I usually cut in half, freeze first, and then put in a vacuum bag (or ziploc, if you don't have a vacuum sealer) once frozen. You can thaw in fridge overnight, on counter, or quickly in microwave. I find that when I freeze them this way, the flavor is preserved better than when already juiced.

I, too, freeze any leftover lemon juice (and lime juice) in an ice cube tray that has a cover. It works very well.

I freeze juice, like Keba and KarenW. I also freeze the juiced halves so I can grate them for zest when needed, straight from the freezer. I found that if I grated and then froze just the zest it dried out really quickly.

I also freeze in ice cube trays, then pop them out into a zip loc freezer bag.
what a great idea to freeze the juiced halves for zest! I was zesting them and freezing the zest but it dries out to almost dust. I will do that. thanks.
ETA I was freezing zest in little plastic containers with a lot of air space. I did oranges that way too but got enough peel to fill the container. tried zip lock bags but they always got lost in the freezer. squeezed lemons wil be easy to locate.
there is also frozen lemon juice from minute maid.... plain lemon juice from concentrate. vastly better than the bottled stuff. near the frozen OJ in a rectangular box. it's easy to miss unless you know to look for it. it's good for 8 weeks in the frig after thawing.

Since I have a Meyer lemon tree I zest and juice a stash for the freezer every winter. I keep the zest in small glass jars and don't have a problem with it drying out.

What a great tip about freezing lemon halves to zest later! I always sadly looked at my unzested squeezed lemons thinking I was wasting all the zest because I knew freezing the zest would ruin the quality.

Great tips. I don't buy lemons in bulk, but it's good to know what to do with them when I find a great deal.
