As I think of them, I'll upload the recipes I most use from the old BB.
This one of Canice's is a favorite; I often switch up the cheeses and the pasta shape
Mac 'n' Cheese for Two
4 oz cavatappi 1 oz butter 1 oz flour 1 cup milk, warmed 2 oz Gruyère cheese, grated 3 oz Colby cheese, grated Small pinch cayenne pepper (optional) Salt and pepper, to taste 1/4 cup panko bread crumbs, tossed with a knob of melted butter
1. Cook pasta for minimum time stated in package directions. Drain and toss with a drizzle of vegetable oil to prevent sticking.
2. Using the same pot, melt the butter over low heat. Once it has foamed, add flour and stir with a flat whisk until the flour has just changed color (about two minutes). Slowly add the warmed milk, and whisk constantly until milk has thickened, about three minutes. Remove from heat and stir in cheese to melt thoroughly. Season to taste and stir in cooked cavatappi.
3. Turn out into two single-serving baking dishes and distribute buttered panko over both.
4. Bake at 350 for 20 minutes. Serves two.

This is my favorite mac/cheese recipe from Alton Brown: Stove Top Mac-n-Cheese Total Time: 35 min Prep: 10 min Cook: 25 min Yield: 6 to 8 servings Level: Easy Ingredients 1/2 pound elbow macaroni 4 tablespoons butter 2 eggs 6 ounces evaporated milk ( use 1/2 & 1/2 or cream) 1/2 teaspoon hot sauce 1 teaspoon kosher salt Fresh black pepper 3/4 teaspoon dry mustard 10 ounces sharp cheddar, shredded Directions (I make the sauce in a separate pan and thicken it. When it is thick enough, I pour it over the pasta). In a large pot of boiling, salted water cook the pasta to al dente and drain. Return to the pot and melt in the butter. Toss to coat. Whisk together the eggs, milk, hot sauce, salt, pepper, and mustard. Stir into the pasta and add the cheese. Over low heat continue to stir for 3 minutes or until creamy. We like the AB recipe as well, but sometimes just want enough for one dinner, maybe two, which is where Canice's recipe comes in. I think I've made it 3 or 4 times this summer.
