My carving knife is crappy. Someone bought us a carving set (with fork) years ago, but it's Farberware and never was sharp enough. I have an electric knife, that I have used at times, but it's not always the best to use. Searching for some info, I came across a review of 5 knives. filletknifeguide.com/best-carving-knife-reviewsSurprised to find some of those knives are really cheap, like $14 for Chicago Cutlery on Amazon. I'm thinking for the number of times I use this type of knife, I'm hesitant to spend over $100 as I was thinking I needed. The article says it's made in USA, but someone on Amazon said China. I would prefer USA or Germany. What carving knife do you have and do you like it. How long is it? I'm thinking 8" is easier to use than a 12". Thoughts? Like I said, it probably is being used 4 times a year as I normally don't make things that need to be carved.

A few years ago I remember Cooks Illustrated recommended Victorinox knives if you didn't want to spend the money on Wusthoff (sp?). I bought my sister a couple of them because her knives were horrible but I don't think she ever used them. I bought their little paring knife for myself and love it - it's still really sharp and it has been 5 years or so.

I bought an 8" Victorinox chef's knife a few years ago based on the Cook's Illustrated recommendation and love it! I have since bought several for family members as gifts and they love it as well. The price is in the $30 range on Amazon. I think you will find that you would use it for many more things than just carving meat--I use it for just about everything!

Thanks. The article has the 12" on there, but that's a bit long I think. I'll look into smaller ones from Victorinox. We really only it for the occasional roast and turkey.
My go-to knives are santoku - I use them for almost everything (besides slicing bread) and I have a couple of sizes.

I do not. I'm small, have small hands and I think it is perfect. Especially if you have a big slab-o-meat. I do have a filet knife that I use when we gut/clean our fish, though I bet I could use this easily.

Thanks wallycat, but looking at Amazon, they had a similar knife that was a lightening deal, an Icel 14" though, for about $18 so I jumped on it. I don't know anything about the brand, but the reviews were good. If can always return it if I don't like it and buy the one you or the others suggested. It large, but for the price....
