Best summer salad to date!
I had to share - I was inspired by an amazing salad I had at a local restaurant, and then two peas and their pod blog had a similar version, which I tweaked
Peaches and Tomato salad
4 peaches, grilled lightly (about 5-8 minutes), then peeled and chopped into big pieces, about 8 sections per peach (I don't always grill) 4 medium heirloom tomatoes, cut into sections
handful of basil
About 8-10 oz burrata cheese, chopped
Balsamic glaze from TJs
maldon sea salt
Toss together the first 4 ingredients and drizzle with glaze and sprinkle with salt. Nice on a big white platter!
EnjoY!

That looks terrific, thanks for posting! Sally, I just posted a recipe on a favorite salad thread started by Wallycat for CL's Summer Peach and Tomato Salad. I don't know if you've seen that CL recipe, but thought I would mention since it has some similar flavors. Love the add of burrata in your recipe. I saved it for next year unless I can get some good peaches at the supermarket. Summer Peach and Tomato Salad. Here's a link. www.myrecipes.com/recipe/summer-peach-tomato-salad

Best summer salad to date! About 8-10 oz burrata cheese, chopped Balsamic glaze from TJs Sally, I would love to hear more about these 2 items. The idea of the glaze has me salivating. What's that cheese like?

Can you see my comment to Sally in the previous post? (Or is that something that being Admin it let me do and isn't visible.) Still in testing mode here. Please let me know. If one person can see it and tell me, then that will help me to know what everyone else is seeing. SO, once one person replies, others need not. Thanks.)

I thought I posted, I'm thinking I forgot to click create post.
Well it looks like I will have to wait to next year. I went to WF and the peaches were like rocks and my go-to "fruit guy" at WF, basically said... until next year.
I'm with you Sally, I was so disappointed that there were no peaches and nectarines in New England. In past summers I would always buy them whenever they were at the farmers market. And, none of my favorite plums either (those ones about the size of a golf ball, that I only see at my farmers market). I can't imagine how much $ they lost from this crop.
I didn't think it was a great season for those fruits -- often the ones I bought at the market were just ok.
I could eat that cheese on cardboard. One of my favorites.
