• Zucchini and leek soup – It’s all easy – liked it cold with 1 cup water and 3 T olive oil – made 3 servings
• Summer squash pizza – SK blog – toast the breadcrumbs. Dough is hard to work with
• Zucchini fritters – SK blog – used light sour cream
• Middle eastern herb and garlic chicken – NY Times - used sumac as suggested, and subbed dried oregano. Liked the sauce from zucchini fritters better
• Blueberry muffins – SK – baked for 22 minutes, used 1/2 a teaspoon of turbinado sugar, and 3/4 cup of sour cream weighed 170 g. Would add vanilla next time
• Lemon zucchini bread – two peas -
used 1/2 white whole wheat flour, 1/2 cup more zucchini, 1/4 cup less sugar, and 1/2 the glaze. It baked in 45 minutes. I also made mini-loaves which baked in 32 minutes.
• Leek toasts –SK - so surprisingly good –
• Blueberry crumb cake – SK – loved
• Tomato and goat cheese tart – MS – super easy and delicious
