I came across this recipe for the calls for dark sweet chili powder. I normally buy my spices from Penzey's but am not sure which type of chili powder fits the category. What would you use? I have a lb of ground bison I took out of the freezer and wanted to make it today since it's rainy and cool. * Exported from MasterCook * Pumpkin Bison ChiliRecipe By : Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 lb ground bison 1 Sweet Onion 1 tbsp. Jalapeño Canned or Roasted 1 tbsp. olive oil 1 clove garlic Diced 2 tbsp. dark sweet chili powder 1/4 tsp. Cumin Powder 1 large can Diced Tomatoes 1 cup Pumpkin Pureee Salt & Pepper to taste Sauté Onions, Garlic and jalapeño in olive oil and set aside. Slowly brown Ground Bison in a nonstick pan. If you don't have a nonstick pan you may need to add a dash of olive oil or water since bison is slow low in fat. Combine cooked bison, sautéed vegetables, spices, diced tomatoes and pumpkin puree into a pot and allow to simmer on low for 10-30 minutes. Serve as is or add a dollop of sour cream, cheese, minced onions, cilantro or your favorite chili toppings. I'm not sure I think of it as dark, but I think of Ancho Chile Powder as sweet chile powder.

I'm not sure I think of it as dark, but I think of Ancho Chile Powder as sweet chile powder. Thanks Patti. I went through my chili powders and don't have any considered sweet. I need to hit Penzey's soon anyway. I'm just going to make my regular chili, which is "winged" and sub the bison.

Ancho would be the most common sweet chile powder, but pasilla negro is darker and has wonderful flavor. I use a lot of both of them. Thoe two plus the mulato chile are caled the trinity of chiles used in traditional mole. You can find ancho in grocery stores, Penzey's -- just about anywhere that sells spices. The pasilla negro and mulato are harder to find. I have ordered from Chimayo To Go (think I learned about them through CLBB discussions) and Spice Jungle. They are both good sources -- just depends on what else I need to order. ETA: I just looked so I could link the pasilla negro from Spice Jungle and theirs just says Pasilla. I'm not sure if that is the same as what I ordered, but I think I would call before ordering.
