This recipe originally appeared in Southern Living. We really enjoyed these! This recipe is kid-friendly, too, IMO. (I lowered temperature to 375 from the original 400; and added details to the instructions.)
Root Beer Baked Beans Makes 4 servings
3 bacon slices (*I use thick sliced, Wright's) 1 small onion, or half of a medium size one, diced 2 (16 ounce) cans pork and beans (*Bush’s Vegetarian Pork & Beans) 1/2 cup root beer 1/4 cup hickory smoked barbecue sauce 1/2 teaspoon dry mustard 1/8 teaspoon hot sauce (Tabasco or other; I like Chalula Hot Sauce, but it's mild so I use more)
Preheat oven to 375º.
Cook bacon in a skillet over medium heat until crisp; remove and drain on paper towels, reserving 1 tablespoon drippings in skillet. Crumble or cut up bacon.
Saute onion in bacon drippings in skillet over medium-high heat for 5 minutes or until tender. Stir together onion, bacon, beans and remaining ingredients. Pour into a lightly greased 1 quart baking dish. Bake beans, uncovered, for 45 - 55 minutes or until sauce is thickened. Stir once or twice during cooking.
Note: Mixture starts out soupy, but thickens in the oven.
