I posted Patricia WElls' french recipe on a different link. I made it for Rosh Hashanah as well. YUM. I used spelt flour and I used stevia as the sweetener...very forgiving recipe; I also had no milk so used yogurt and some cream. I used King apples (neighbor has small orchard). SO good.

This cake is delicious! Thanks for posting it.
I used Golden Delicious apples, and the cake took 40 minutes in my oven.
This recipe is a keeper!

I'd like to make that apple cake but my alcohol stash is quite low -- just white wine and maybe some vodka. Did you both use rum, left it out, used something else? Of course I could get a small bottle at the liquor store but just wanted to see what you both used. Thanks.

I don't think that the cake would be as special without it.

We couldn't identify a rum taste in the finished cake, but I think it leant a subtle richness to the cake. We had it for dessert, but I think this would make a nice breakfast cake, too.

I completely agree -- this was delicious. I took a detour after going to CVS and bought a small bottle of rum. And since I had all the other ingredients ... Oh, and if anyone thinks this was a coincidence, oh that is funny.
Lots of great apple recipes have been posted on this board and that along with a folder on my laptop of just apple recipe, I could see myself buying lots of apples this season so I can try some new recipes (and some old favs too).

I noticed last night when I was washing the cake pan that I'd actually used my 8 inch round pan instead of 9 inch. I have both but just happened to grab the 8 inch one.
That resulted in a nice high cake. We liked the results so I'll probably stick with that size.
Anyway, either size works so you can use whatever you have.
