I was 2 for 2 this month.
4/2 Banana Sheet Cake with CC Frosting (noblepig.com) Really good. CC+SC= best frosting.
4/2 Pork Meatball Soup with Wonton Noodles and Baby Bok Choy CC Dec/Jan23 This was a good idea, but not great in execution. The chili-garlic sauce flavored everything heavily. Too many noodles. I would try again though. It’s not bad, but just not wonton soup.
4/2 Hot Crab Dip (MSL?) I just messed this up because I was in a rush, but I am still not sure I would try it again.
4/8 Easy Freezer Waffles (SK) These were good. Definitely make-again if I had yogurt to use. Used Target Greek which I don’t think is thick. Remembered to undercook, too!

I'm not going to even try to remember everything I made but a few that I remember: Roasted Sweet Potatoes with Lentil Mushroom Ragu and Whipped Tahini Feta Sauce www.epicurious.com/recipes/food/views/sweet-potato-dinner-with-mushrooms-lentils-and-feta-tahini-sauceChicken Enchilada Soup-made this up myself by combining elements of a few different recipes and turned out delicious!! Roasted Eggplant with Za'atar www.cherryonmysundae.com/2022/05/zaatar-roasted-eggplant.htmlSheet Pan Salmon with Sweet Potatoes and Broccoli-Eating Well Turkish Beans with Pickled Tomatoes-Milk Street Kitchen but I made it vegetarian and left out the lamb. Dingy looking probably from the pomegranate molasses, but tastes great! No Fry Eggplant Parmesan-Milk Street. This was wonderful!!! And a few things I baked that I can remember (all tried and trues) I use peanut butter instead of oil/butter for the first two of these and it works great! Granola Bark-Smitten Kitchen Granola Biscotti-Smitten K. Chickpea Flour Chocolate Chip Cookies-Ambitious Kitchen. This was a pleasant surprise. I've been playing with different flours lately and decided to give this a shot. They were really good! Chickpea flour bagels-Power Hungry blog. I wouldn't call them bagels but they were a nice tasty bread with a hole that I will definetely make again. |

I made a Sourdough Skillet Dinner and used chicken breast, a garlic Italian spice blend and used frozen veggies. We definitely will make this again…might try it with pork next time. |
