Southerner here... so I was brought up with well-cooked, soft greens with something porky added. Adults used a bottle of pepper vinegar to brighten things up (like Trappey's pepper vinegar if you haven't seen this before). You may want to check out Chinese options for stir-fried mustard greens or Indian or Greek recipes, as those will bring other flavor profiles and different cooking techniques. Some recipes have you blanch the greens first to reduce some of the bitterness before a quick saute. The greens don't have to be stewed to death  There was a Green Soup basic recipe in the past by Anna Thomas (author Vegetarian Epicure and other cookbooks) that could a variety of greens. If you Google Green Soup Anna Thomas, you'll find some hits. Good luck and please report back on what you make that you like.

You can try this recipe:
Ingredients:
-1 bunch mustard greens, washed and chopped -1 tablespoon extra-virgin olive oil -1/4 cup diced onion -1/4 cup diced celery -1/4 cup diced bell pepper -2 cloves garlic, minced -1/4 teaspoon red pepper flakes -1/4 teaspoon ground black pepper -1/4 teaspoon sea salt -1/4 teaspoon smoked paprika -1/4 cup vegetable broth
Instructions:
1. Heat a large skillet over medium heat. Add the olive oil.
2. Add the onion, celery, bell pepper, garlic, red pepper flakes, black pepper, salt and paprika. Cook, stirring, until the vegetables are softened and fragrant, about 5 minutes.
3. Add the mustard greens and vegetable broth. Stir to combine.
4. Reduce heat to low and cover the skillet with a lid. Simmer for 8-10 minutes, stirring occasionally, until the mustard greens are wilted and tender.
5. Taste and adjust seasonings as needed. Serve warm. Enjoy!
