Do you have, buy or make the perfect potato salad FOR YOU?
I've been searching for years...for a potato salad that I can truly love. (Von's in So Cal used to make a sour one that I adored. No clue how they made it and it's now too long ago--many decades and a state away--to try to find out.
But there is a bar here in town that seemed to me to make the best potato salad ever! I craved it!! We went there JUST so that I could get my fill of their potato salad!! BUT THEN, RECENTLY/SUDDENLY, they changed their recipe. EWWW!! I don't like the new way AT ALL!!
BUT THE GOOD NEWS IS -- I think I finally figured out the way they USED to make it and wow...was I surprised. (First, that I'd stumbled into it, and second, that it is so stupidly simple!!)
Pink potatoes, large, cut into quarters and cooked in the IP -- almost overcooked...then most of the skin pulled off by me after.
Apple cider vinegar, A very small amount (e.g. 1.5 tablespoons at the very most...if even THAT much) - pour on potatoes while still warm
Hard boiled eggs, just a couple (not sure it needs it...but maybe)
Celery, small dice
Scallions (green onions), sliced
Mayo, lots of
Mustard, a very very small amount
Salt and pepper
Good heavens! It was an accident. I had diced onions for it and then forgot to put them in!! I began eating and went into fits because: "THIS TASTES JUST LIKE THAT GREAT POTATO SALAD THEY MAKE OVER AT THE IRISH PUB!!!!"
SO, I found my perfect potato salad and WHO KNEW (??) that I don't like white onions in it? No. I guess NO! The green ones (scallions) were perfect for the flavor of potato salad I seem to adore! (I don't know if the vinegar is a must, nor the eggs...but I think I'll keep em.)
It's been YEARS/DECADES for me hunting for my very fav tasting potato salad. I'd pretty much given up on finding my dream one. WHO KNEW THE SIMPLEST WOULD BE MY FAV?!!??!! I am a bit shocked at myself. I normally like things loaded up with flavors! This is crazy, but I am so happy. SO HAPPY!!!
