Still haven't recovered from the loss of all my files. I'll get there.
This was delicious and I made it twice this month. Slightly different both times. Very adaptable. Like lasagna with no noodles.
9/10 Cheesy Zucchini Eggplant Bake (BA 8/17) KarenW is right—light and tasty. Used mostly zucchini. Make sure veggies brown! Mixed basil in with cheese and added some dried oregano. Only had a tbsp or so of fresh basil.
9/19 Brazilian Carrot Cake (Food52) This was good (not a really distinctive taste to the cake) and orange. Would be good for Halloween

Erin-I'm so glad you enjoyed the cheesy Zucchini Eggplant Bake. I like anything eggplant and I love Claire Saffitz's recipes so it was a "no brainer" for me. I just made Eggplant Parmesan today!! (Sam Sifton recipe). What is so great about his version is there is no frying or breading so it comes together quickly and you don't miss anything. I did not keep track of new recipes this month and have been busy with a lot of bakery orders (for my home bakery business) so not much else to add at the moment (sorry!). I did make a few of my own modifications including using hot Italian turkey sausage, dried hominy that I cooked ahead, a small can of tomatoes instead of fresh, and I did puree a bit of the hominy with some soup base to add some creaminess/body/corny flavor to the soup. I also added some fresh corn. Really great flavor! Karen

mariashriver.com/eggplant-parmesan/Found it here Wallycat! I used fresh breadcrumbs on top mixed with Italian seasonings, garlic powder, and Parmesan; then moistened with olive oil. I also scattered some extra chopped fresh basil and oregano on each layer because if I don't use what I have in the yard now, it is not going to live much longer as the weather gets colder here. Other than that, I stayed pretty true to his recipe and I have made this before so I know it is tasty.
