I get to start and play this month:
-Mexican Chicken Soup with Vegetables (Caldo Tlalapeno)-Milk Street Kitchen. I used brown rice(cooked separately) and decreased the amt. a bit and added chickpeas which is more traditional for this soup. There was still plenty of rice.
-Olive Garden Minestrone-excellent flavor but a bit thick. Next time I will add more liquids.
-Chunky Monkey Frozen Yogurt Bark-plain Greek yogurt lightly sweetened and swirled with peanut butter, then topped with banana, chocolate, and granola. Break into chunks and keep in freezer. Great for breakfast and snacks.
-Chicken Salsa Verde and Tortilla Casserole (Pastel Azteca)-Milk Street Kitchen. An old favorite.
-Eggplant Parmessan Stuffed Portobello Mushrooms
-Granola Biscotti-Smitten Kitchen recipe with my changes. I was looking for a peanut butter biscotti and I liked the idea of the oatmeal in it so I used her recipe as my jumping point and substituted the butter in her recipe with peanut butter; used almonds and chocolate chips instead of dried fruit as I hate dried fruit in biscotti. It tends to dry them out too much and get to hard. Loved these!!
-Buttermilk Bran Muffins-forgot source but excellent. I substituted bananas for applesauce called for in these.
-Salmon with Tomatoes and Tarragon-old tried and true Cooking Light recipe
-Sumac Chicken with Tomato onion Salad-Milk Street. Sauce was great. Very light and refreshing for hot night.
-Hearty Chicken Vegetable Soup-made it up with fridge bin leftovers
-Almond Streusel Rolls-yeasted cinnamon roll but with almond filling
-Sweet Potato, Carrot and Spinach Eggah-Milk Street. An Egyptian fritatta like dish. Very nice light side at dinner or could be a main with a hearty salad.
-Cauliflower Steaks with Pickled Peppers Capers and Parmesan-Milk Street. Made these on the grill instead of oven and a bit al dente but excellent flavor.
-Portuguese Sweet Potato Rolls (Bolo De Caco)-English muffin like roll with sweet potato. Excellent. Milk Street Kitchen.
-Cowgirl pie-made it up with leftover chicken from making chicken stock. Basically a barbeque chicken pot pie like casserole. filling and tasty.
