In honor of my daughter's birthday today (and she is, as always, begging for) this -- her favorite ICING on white cake. You would think she'd be long over this, but oh boy did she make a case for having this on her day today. Nothing new. Happens every year. Gosh...and it's such a simple recipe!  * Exported from MasterCook * Broiled Coconut Frosting (Very TNT) Recipe By :Better Homes and Garden Cookbook (the old plaid one) Serving Size : 6 Preparation Time :0:00 Categories : Cakes Icing Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2/3 cup brown sugar 1/3 cup butter -- melted 1/3 cup milk 1 1/3 cups flaked coconut 1/2 teaspoon vanilla Thoroughly combine brown sugar, butter, cream (milk), coconut and vanilla. Spread over a warm 9-inch square cake. Brown lightly under the broiler. (I like it brown here and there to darken at bit, but not burnt. It burns quickly, so hover over it. BUT, don't pull it out too soon, light blond is not what you're after. Get it to lightly brown up as much as you can.) This is our family favorite. My mother made this for me all throughout my childhood and all their lives, both of my kids insisted on a light colored cake with this icing for every birthday!! Generally, I don't like coconut, but this is to die for. I use salted butter. I add more vanilla, about 1 teaspoon and always stand right over the stove to watch the top brown (it burns easily) in the broiler--rotate the pan to ensure even browning. Also, we aren't fussy about the measuring--it is forgiving. Double and triple recipe for larger cakes and sheetcakes. I use any milk in place of cream.

This sounds like something my mom would like, Catbatty. Maybe with a chocolate cake it would be an easier German Chocolate Cake!

My mom would make that froston on either a yellow cake or and oatmeal spice cake and I always liked it. I've made it, but it just wasn't the same. I'd love to have it the way I remember it.
