BEST BANANA BREAD: MY DAUGHTER BROUGHT US A LOAF OF BANANA BREAD SHE MADE. OMG. IT WAS MOIST AND STAYED MOIST WRAPPED UP AND STORED IN REFRIG FOR SEVERAL DAYS AS WE ATE OUR WAY THROUGH IT FOR NIGHTLY DESSERT. IT PROBABLY IS THE BEST I'VE EVER TASTED. I BEGGED HER TO SEND ME A LINK AND HERE IS WHAT SHE EMAILED ME. BEST BANANA BREAD -- EMAIL FROM KENDY TO MOM: You can find that recipe here: rasamalaysia.com/best-banana-bread-recipe What did I change? I didn't have yogurt so I used sour cream in its place. The author mentioned having used a honey yogurt, so I added about 1/2 Tsp of honey and 1/2 Tsp of vanilla paste to the sour cream and mixed it up. I did opt to use the rum - Captain Morgan's Spice Rum I made 4 loaves. I used a regular loaf pan for 2 loaves and sprinkled demerara sugar on top to add a sparkle and crunch. I also used a specialty loaf pan I bought from King Arthurs with a pretty flower mold. No issues using either as I had sprayed both with baking spray generously. Oh! I used frozen bananas which I highly recommend letting get a little warmed up before you use it. Otherwise it will freeze up your butter mixture...yeah that happened. Plus you can drain off some of the liquid since once thawed they do get a little soupy. Hope you try this - it's a keeper for the recipe box. XXOO K
