Anyone made a breakfast casserole like this? I am tempted! Of course I didn't bother to record where I got it from and it is written on scrap paper so that's no help!
19.5oz turkey Italian sausage
6oz baby spinach, chopped
1 c shredded smoked provolone
1 c shredded smoked mozzarella
1/2 c sun-dried tomatoes, drained and chopped
1 1/3 c self-rising flour
1 tsp salt
1 1/2 c milk
Preheat oven to 350. Spray a 3qt pan. Cook sausage. Place spinach in bottom of dish and top with sausage, cheeses, and tomatoes. Mix together flour, salt, eggs, and milk. Pour over. Bake for 25-30 minutes.

I didn't do it! I made two sheet pan frittatas from BHG instead. It just seems so strange with no eggs in the filling and with 17 for brunch, I didn't want to experiment quite that much! One of these days I'll make it for a smaller crowd.
