Applecrisp: Ok, I'm now curious.... did you buy a bag of oat flour or over-process some oatmeal? I think I've seen recipes that use only oat flour. I'm interest to see what others come up with. If ONLY oat flour, would the end product be very heavy? Can't wait to hear. Thanks for asking.

applecrisp-I make a cookie with oats, oat flour, and almond flour that I really enjoy. Not sure if you are interested in a cookie with more than just oat flour. It does not have any AP flour and the texture is softer/cakier than a typical cookie but they are tasty. If you are still interested, I could try to dig it up for you. KAF Whole Grain Baking book also has some cookie recipes with just oats and/or oat flour that are good. If you don't have the big, try the website perhaps.

This is not a tried and true but back in the day when we ate a lot of vegan, I thought most of Detoxinista's recipes were pretty darn good. She also gives instructions on how to sub oat flour for all-purpose flour in any cookie: detoxinista.com/oat-flour-cookies/

Wallycat-I have not tried it with barley flour and I am not sure it would work. It is a very different consistency than oat flour but you could give it a try;. I don't have the recipe with me now and it's not on line so I will try to remember to type it for you tomorrow.

Wallycat....it's really not a problem. Here it is:
SOFT OATMEAL COOKIES
2 eggs 3 T. melted coconut oil 1/3 c. coconut sugar or brown sugar (I used brown) 1/3 c. maple syrup 2 t. vanilla 3/4 c. almond flour 1 c. oat flour 1 c. oatmeal 1 t. baking soda 3/4 c. dried fruits, nuts, and/or chocolate chips, opt. (I used raisins that I plumped up in hot water and some semisweet chips) Dash salt cinnamon (I added this)
In bowl, melt coconut oil in microwave ~ 30 sec. or until liquid. Add sugar, maple syrup, vanilla, and salt. Whisk well. Whisk in eggs, one at a time. Set aside. Add both flours, oats, and baking soda. Add the dry mixture to the wet ingredients. Fold together. Stir in any add-ins. Drop by TBSP. onto parchment lined pan ~ 2" apart. Bake 325 degrees ~10 min. I did flatten them slightly before baking. They don't spread much and are very soft/cakey but in a nice way (I think so anyway!!!).
