In Spain, paella (all types) are always made on a Thursday or Sunday. They are also served at bars and restaurants on these 2 days and served free with the cost of wine or beer or other type of beverage. Today, I worked remote from home and prepared an unusual rice dish with Spanish fresh sausage (never used in Spain) to use up the sausage hanging out. Here is the photo.

I love paella and have only had it in Barcelona but it wasn’t free . Of course I was by myself so I wasn’t sitting at the bar but if I ever go again, I’ll keep that in mind. However, it’s unlikely I’ll have the opportunity to visit again since I changed jobs and no longer travel for work and DH has little desire to travel abroad. Boohoo!

Actually, the loveliest Metropolitan city in Spain is The Madrid Capital. I lived in Madrid when I was studying at University many years ago and where I met my husband.
However, we are based in Barcelona and close to my parents and married sons and 2 grandsons.
I prefer shellfish paella however, as mentioned, I had chorizos and fresh sausage to use up .. Not bad however, I did cook the sausages and chorizos separate from the rice to eliminate a grease factor.
Right now, travelling is complicated at this moment ! We hope to go to Italy in late February, a pleasure and business trip ..
We will be making a High Speed Train trip to Madrid for our National Holidays coming up - Week December 4th to December 9th.

I made a double recipe of this one for a party many years ago. It was delicious. www.tienda.com/recipes/mixed-paella.html. I also have a simpler version on my old computer, I need to dig that one up, it's been a long time since I've made it. This topic reminded me how much we liked it.

Shall take a look at the link you have sent ..
This recipe is more or less a Paella Valenciana.
Normally, I prepare a Paella Marinero (only shellfish ). Marinero is a sailor´s Paella !
However, I needed to use these sausages fresh and dried (chorizo ).

I am sad to say that I have never had Paella. I've made countless rice + other items, rissoto, refried, pudding (sweet), kedgeree, mexican-style, but never a Paella. That will be my 2022 attempt! Nope, will not buy a paella pan but will use my carbon steel pan.

My mom uses a gigantic circular terracotta clay earthenware to prepare her paella during Christmas Week .. It is one of the best forms of preparation.
It is an aged earthenware and was my maternal grandmother´s ..
Just truly quite a difference.
However, whichever cooking vessel you choose, I am sure it shall be lovely !!
