I might make this over the weekend since my plans changed and I have a few zucchinis and basil I want to use up. Might tweak a bit based on what I have on hand/want. I don't cook with zucchini often so looking forward to trying it (don't like it when mushy) Zucchini Parmesan Pasta www.twopeasandtheirpod.com/zucchini-parmesan-pasta/"Zucchini Parmesan Pasta with fresh basil and brown butter bread crumb topping ...." I had this a few days ago and it was very good. Great way to use up some food in the freezer and spinach in the fridge. OMG does that look incredible! The mention of corn meal/polenta on the other thread got me hankering for Tennessee Corn Pone (from Laurel's Kitchen; the "bible" of the 70's vegetarian cooking). SO good. Mine was not vegetarian since I cooked my beans with bacon.

The Ecological blue rare Basque Black Angus is a true jewel .. Do not eat too much meat, however, this is our fave.
POLENTA: Well, this foto is a mistake and I could NOT eliminate it .. However, another truly exceptional dish. Works well with sausage, meatballs, short ribs and other types of beef for stewing and legumes too ! and veggies too.

I made a tasty potato soup last night that we both enjoyed, Didn’t follow a recipe but used things I needed to use up. Served it with bacon crumbles on top and garlic bread on the side. Delish!
