Looking for some new slow cooker recipes to add to my repertoire - I need some inspiration! I just started a new job and the long days plus the commute time don't leave me with as much motivation to do the whole 'cook and clean up' thing haha. So, the ol' crockpot would certainly be nice to use more often now that I'm not getting home until later. Thanks in advance for sharing any of your faves

I haven't made this in years but I used to love it - I might have to put it on the menu for next week!
Weight Watchers Moroccan Slow Cooker Stew
INGREDIENTS
Cooking spray 1 spray(s), (5 one-second sprays per serving)
Uncooked onion(s) 1 small, chopped
Garlic clove(s) 1 clove(s), medium, minced
Uncooked butternut squash 3 pound(s), peeled, seeded, cut into 1/2-inch cubes
Uncooked carrot(s) 1 cup(s), baby
Canned crushed tomatoes 1 cup(s)
Vegetable broth ½ cup(s)
Ground cinnamon ¼ tsp
Cumin seeds ½ tsp
Red pepper flakes ½ tsp
Chickpeas (15 oz) 15 oz, drained and rinsed
Table salt ½ tsp
Instructions Coat a small pot with cooking spray. Add onion and garlic; sauté for 5 minutes. Place squash in a 3-quart or larger slow cooker (crockpot). Add onion and garlic, carrots, tomatoes, broth, cinnamon, cumin and red pepper flakes. Cover and turn on to low heat; simmer for 6 hours. Add chickpeas and salt. Stir, cover and heat for 5 minutes. Yields about 1 1/3 cups per serving.

Cranberry Chicken Thighs ~
1 onion, thinly sliced moons 2 cups fresh or frozen cranberries (or 1 can whole cranberries) 6 skinless chicken thighs 1/4 cup chili sauce, or catsup 1/4 cup brown sugar 1 teaspoon dry mustard 2 tablespoons balsamic vinegar
Mix the onion and cranberries in a slow cooker, Arrange chicken on top. Mix the catsup, sugar, mustard and vinegar, pour over the chicken, cover. Cook on Low 6-7 hours. Serve over Rice, Barley or Couscous.
