There is still time to buy fresh corn at the farmers market or in the produce section of your favorite grocer. Out-of-season use frozen or canned corn for an occasional indulgence. Jacques Pepin's Corn Fritters - 1 cup flour 3/4 cup soda water, or beer 1/4 teaspoon salt 1-2 ears sweet corn kernels (about 1 cup) 1/4 cup oil Whisk the flour, half the soda water, or beer, and salt until smooth. Mix in the rest of the soda water and corn. Heat 2 tablespoons oil in a nonstick skillet over high heat, use a 1/4-cup measuring cup to measure the batter. Cook about 4 minutes until bubbles are breaking, turn with a spatula, cook 4 minutes until cooked through. Drain on a wire rack over absorbent brown paper - not on paper towels.
