I have more protein in my freezer that I ever had at one time. Many will laugh since it is only 12 ounces of chicken breast, 12 ounces hamburger meat, and 12 ounces of ground turkey. It's from one of those meal kits that I was gifted. I was thinking of maybe trying this. Greek Burgers with Herb-Feta Sauce www.eatingwell.com/recipe/276345/greek-burgers-with-herb-feta-sauce/ And maybe my favorite fajita recipe that I got from this board thanks to SallyT that I need to find. Or maybe make some meatballs and freeze the rest. Or ? And have a question, any issue freezing the protein once its cooked? I know defrosting and then refreezing uncooked meat is a no because they say impacts taste etc (and no reason for me to defrost and refreeze uncooked). I've frozen cooked protein (that was frozen raw) and didn't notice any difference in taste/texture. Thx

It is less a no-no and more a compromise on quality/texture. Still perfectly safe. I think once it is cooked, the texture has already been changed, so freezing again should be fine.
I did have to smile....especially the year we had a great salmon fishing season and I butchered my first deer. Talk about a lot of protein!!
How lovely that someone gifted you with the meal kits. I've never tried one of those sign up things; you'll have to write a review somewhere and share your experience.
Are the chicken breasts frozen in one solid package? You could just take out what you need if you can break them apart.
YUMMMMMMMMMMMMM on greek burgers and any cheese sauce is a winner...Double yum on the feta sauce.
If you are uncomfortable refreezing, the burger meat would make about 4 patties; same for the turkey. You could blend the two meats and make a meatloaf and it should keep for several days.

Thx. I lost my reply. Let's try this again ...... I'm with you on the greek burgers, no surprise that I thought they sound great given the ingredient. And I love feta in any form.
I was quick typing my original post so didn't mention that refreezing is more of a texture issue. I've defrosted uncooked protein, and cooked, and then froze and never noticed a real difference .
I should have split the chicken etc into smaller portions but I just tossed it into the freezer so they area all in solid vacuum sealed packages.
I might make chili with the hamburger meat and freeze it (using my go to CL recipe that KarenW mentioned years back, super easy and so good).

Chuckling here. I was thinking of something like we did last year. Our CSA farmer had 2 grass fed cattle - I think they were an Angus/Wagyu, and he was offering up to 8 shares. One family quickly snapped up a whole cow. We'd been cooking for our dogs since we were told out lab had the beginning of kidney disease and needed a special diet -- but absolutely refused prescription diets, and we were starting to get concerned about meat supplies as the pandemic was shutting things down. We could eat vegetarian, but the dogs could not. So we took a half -- a full side of beef. Our lab left us 3 weeks ago and we still have a freezer with a lot of beef. LOL. I remember my mom doing something like this once. Once. I would be willing to do a quarter. But not for a while.

I am so sorry to hear about the loss of your Lab, Beth. It is never easy to lose them, is it? But wow...a Wagyu beef diet. Arf, Arf, Arf!!! YUMMMMMMMMMM. Too bad we are not neighbors! I told DH if we have a good fishing year, I will not hunt. My vacuum sealer has been a wonderful thing for keeping meat longer than I normally would like.

The cow was only half Wagyu, -- a mixed breed. LOL. The farmer cautioned it would be different from what we were used to, but the only issue we have had was that they didn't cut it as we requested. It has been lean, tender and had great flavor. And it was all packaged vacuum sealed and labelled. If we had gotten the tri-tip and flank steak we asked for, it would have been perfect -- and we were able to get to Costco and get those cuts. We don't fish, but that would nice too. I bet you get some nice fish up there.
No, losing pets is never easy, but I cannot regret a day she was with us and feel fortunate to have had her at all and especially so long.

We only fish locally so all we can get are salmon. This is a "pink" year (pink salmon, ever other year) and I sure hope it is a good fishing year. King are usually caught out on a boat, which we don't even attempt. Coho are the next biggest. Sockeye do not come here, as far as I know. The first year DH took me to fish with him, a few years after we moved here, I had a record 21 fish!! TWENTY ONE. That haul got considerably worse with the last two years, I was lucky to get one fish. ONE. Sad. "They" say salmon are dwindling and getting smaller but no one believes it unless they are out there, facing the disaster. DH may go crabbing at least once or twice this year. He's not as strong as he used to be...between cancer and age, I'm just thrilled he even entertains it and is able to go!

I love salmon -- probably my favorite fish. Trout is good too -- I think my uncle would get trout up there (lived in Portland -- closer than TX. LOL). And my son loved walleye when he went to Boundary Waters -- didn't know if you got that there. But that's some of the best fish, in my book. Red snapper down here -- and Gulf shrimp. Catfish is okay. But only salmon would go a long way for me! Enjoy!

Walleye is my favorite, maybe because I eat so much salmon. It was easy to get in Wisconsin. We'd have to drive over the Cascades to fish walleye, and probably won't do that. Too bad. I can't even find Walleye in the stores here.
