Hi. I'm having a difficult time cooking rice. I've tried it high pressure fir 10 minutes and rice mode. Using long grain white rice and it certainly is not turning out fluffy? Any suggestions? Thanks Randee

Welcome, Randee!! Nice to have you with us! Sorry I can't help on this rice issue. We have a 6-quart and my husband makes the rice (always brown rice, I think). But he will be home in a few days (he backpacks for a week ea month) and I will ask him for any ideas. I will ask at one of my fav spots--Mastercook group--and see if anybody else might help. Perhaps someone here will know, too. Again: so happy to meet you, Randee!! ADDING A PS: I put out the word at several groups, Eat-L group and both Mastercook groups (one is recipes only and one is discussion related to that recipe software). If we don't get your some answers, I'll eat my OWN rice!! <scrambling around to see if I can find any white rice to try out in my cupboards>

I have a 6 qt insta pot. have not been happy with rice. I googled it but following directions and the rice button it does not get done enough. grittiness to it. cooking longer it starts to burn. I've tried using more water. I always use more water than what directions say but it still turns out better on the stove top. I usually make lundberg brand brown rice. I have read somewhere that I need to make 2 cups of rice at a time but thats way too much rice. Ill watch here to see if anyone has other thoughts. Ive tried several times and recorded water/rice amounts and how long I cooked it but not home right now to check my notes.

Well, I have asked around at email/online groups I belong to. At Mastercook groups my question generated several emails but all were about BROWN rice and there was some debate. (Nobody mentioned 8-quart.) H0WEVER, Re BROWN rice, Linda at Mastercook Recipes group posted this:
This is the recipe I use. I am sure it would work in an 8-quart. I only have a 6-quart. I actually made some today. It is DELICIOUS all on its own without anything on it!

---- Plus: Also re BROWN rice, here is my own, dear husband's never-fail method in our 6-quart:
In our 6-quart brown rice has never been a problem. 1 cup water to 1 1/2 cups water, 25 minutes, quick release, open, stir, let sit for about 5 minutes.
NOW,
Re WHITE rice:
At the Eat-G recipe group, Kathleen posted something I think will be of interest. I'll copy her note here. Good stuff:
Kathleen Bowen, a member of the Eat-G list kindly answered our plea for help:
I have made large batches of basmati in my 8 qt IP, a classic Duo. I usually make normal batches in a small rice maker while some large protein is in the IP...lol
Urbashi Pitre, creator of Two Sleevers, has the best recipes for grains for the IP. She ruthlessly tests and minimizes steps to accomplish a great outcome:

that cooks longer than what I've done but I had the scorching issue when I went longer. the rice was not done either. not mushy, just not cooked long enough. when I get home in a week or 10 days I will pull out my test page results and give this a try. I don't trust my memory for exactly how much water/time I used. it was one of the main reasons I bought an IP so I do hope this works for me. thanks for following up.
