I have a peach tree with limbs about to break. Help me use these peaches, I hate to have them waste. I've made peach jam, peach-vanilla jam, peach-raspberry jam, peach salsa, peach crisp and frozen them for future smoothies and cobblers.
I still have so, so many. Do you have any other recipes for peaches that are winners?

I love home-canned peaches. I was given some small peaches from a relative a few weeks ago that were impossible to peel and would not come off the pits. So I peeled them, cut them kind of like a mango, and diced up the peaches. Canned, diced peaches. It was quite a bit of work for the amount of peaches I ended up with, but at least they got used!
Usually I just make canned peaches, but the peaches have to be firm (and come free of pits and peels) or they end up mushy in the jar.
Have you made a peach pie yet?

And I'll help CafeLatte. Our peaches are all gone now -- and by "our I mean the ones we get. My trees didn't produce a single one. The heavy rains we had this ear just knocked the all out -- evenon the tree that boomed earli=y enough that they set initially. I made peach cobbler and peach jam will purchasesd ones. I also made a peach sorbet -- puree, some lemon juice, sugar and a little water (you can use a little wine or liquer if you like). Not a recipe so much as something that's hard to mess up.

Got Prosecco? Peach Bellinis come to mind. Prosecco and peach puree.
Wrap a slice with prosciutto.
Slice and serve with fresh blueberries over oatmeal with cinnamon and cream/milk.
Slice in half, remove pit, brush w oil and grill. Sprinkle with cinnamon and fill with vanilla ice cream.
Peaches and pork (chops) pair well together.
Grilled peach salad with mozzarella and prosciutto over arugula etc.
Peach caprese salad using sliced peaches in place of tomatoes.
Nice over French toast, or in a breakfast parfait with yogurt.

I got this recipe at a farmers market. It's a family favorite.
Peach Upside Down Cake
1/4 cup margarine 1/2 cup brown sugar (packed) 2 cups sliced peaches
Heat oven to 350 degrees F. Melt margarine over low heat in a 9 x 9 inch pan. Sprinkle brown sugar evenly over margarine. Arrange peach slices in pan.
Cake 1 1/4 cups all purpose flour 1 cup sugar 1 1/2 tsp baking powder 1/2 teaspoon salt 3/4 c milk 1/3 cup shortening 1 egg 1 tsp vanilla
Mix all cake ingredients in a large bowl. Blend 1/2 min on low speed, scraping bowl constantly. Beat 3 minutes at high speed, scraping bowl occasionally. Pour into pan (over peaches). BAke 35-45 minutes or until wooden pick comes out clean. Invert onto plate. Leave pan over cake for a few minutes. Serve warm and, if desired, with whipped cream.

This evening I was talking to DH about a traditional German way of preserving seasonal fruit. Last time I visited my 90-year old aunt she was just starting her yearly Rumtopf.
