My dad's crop of shallots was really good this year and I ended up with a small bag of them. I've been using them in various things, but was wondering if anyone had a recipe that featured them. Seems like I should let them play a lead role since I have so many!

Not a recipe so much as a method, but DH thinly slices a shallot when whe roast cauliflower-- by itself or with broccoli, carrots, potatoes (also with potatoes only). Just add a touch of olive oil, salt and pepper. All variations have been very good. Trying to remember what else we buy them for but drawing blank. Will come back if I think of some.

Slice them into rings, separate them, and dredge in a combination of flour, salt, pepper, paprika, and chili powder. Fry until crispy. Use as a garnish for meats, fish, curries, and salads. Or just eat them by the handful. Shallot Tarte Tatin with goats cheese. Caramelised, balsamic whole shallots with creamy goats cheese all in pastry.
