This might be the perfect recipe for now: easy, fast, one-bowl, adaptable. I made a half recipe in an 8x8 with chocolate chips and butterscotch chips. They get golden and the edges are chewy.

Yikes! The recipe gets so many rave reviews! Thanks so much, Erin!! Oh, plus looks like even if just used as a 'base' for various additions it's a great recipe. 👍

Definitely, Catbatty. I used chocolate chips and butterscotch chips. Could see raisins and walnuts, dried cranberries and white chocolate...

I did a half recipe of these as well, with chocolate chips and toasted walnuts. Came out great (very crumbly while they were still warm, but they firmed up once they cooled). And as a bonus, I should be able to easy convert them to vegan (one of my close friend's daughter is currently vegan, and it's made baking for their Christmas/birthday boxes challenging!)

erin -- thanks for posting! I think I have all the ingredients (I'll just use plain choc chips). Not sure if I have white sugar, but I do have brown. I'll also halve the recipe. I've been in the mood to bake something --- time to pull out the baking pan!
