So I went to use one of my onions last night and the entire bag had gong bad and they're not more than a couple of weeks old . I had some red onion in the fridge so I used that in my soup but I want to make chili and I really don't want to go to the store. Do you think I could use the dried minced onions without ruining it? I did a Google search and the general consensus was yes but I thought I'd come to the pros . What do you all think? I'm making the Smoky Black Bean Salsa Chili. Thanks!

How much onion does the recipe call for? I sometimes use dried onions when making things like meatballs, but I've not used them for things like chili where the onion is both flavor and texture.

Here is the list of ingredients. And I realized I got the name of the recipe wrong. It's Black Bean Salsa Chili. Doesn't mention anything about smoky in the title.
Ingredients
2 (15-ounce) cans black beans, rinsed, drained, and divided
⅔ cup water
1 tablespoon dark brown sugar
Cooking spray
½ pound ground turkey
1 cup chopped sweet onion
½ cup chopped green bell pepper
½ cup chopped red bell pepper
3 sweet hickory-smoked bacon slices, chopped
1 ½ tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon dried oregano
.13 teaspoon crushed red pepper
1 ½ cups mild salsa
3 tablespoons tomato paste
1 (14-ounce) can fat-free, less-sodium beef broth
½ cup reduced-fat sour cream
¼ cup chopped fresh cilantro
1 teaspoon fresh lime juice

I''m hesitant about replacing a cup of fresh sweet onion with dried minced onion. That said, my jar of dried onion say 1 oz of dried onion = 3 ounces of fresh onion and to rehydrate with an equal amount of water. I've never used it in large quantities. It depends on how prominent you like the onion flavor. I'd probably use less dried onion and increase the bell peppers. Using dried onion won't ruin it, but it probably won't be the same.

I agree with Patti-- a cup of fresh chopped onion in the chili is a pretty good amount, and I think that the flavor and chunky texture of the chili will be affected. I'd run to the store... 😉 or put off the chili until you are able to buy fresh onions. I hate it when they go bad so quickly, happened to me a couple of months ago.

I ended up going to the store and will make the chili tomorrow. I justified the run to the store because I think I’ll need wine for tomorrow.
