Anyone have a favorite "chili recipe" (so many recipes they call "chili" just because they have certain ingredients. My hands down go to is a CL recipe that KarenW posted years back. Black Bean Salsa Chili (I leave out the bacon, sub chicken broth etc). It is easy to make and freezes great.
Thanks for reminding me about the Black Bean Salsa Chili. I made it about a year ago and we loved it but I had completely forgotten about it. I think I'm making chili for New Year's Day and now I know what recipe to use!
I also like Cook's Illustrated White Chicken Chili a lot....both their stovetop and slow cooker version. The slow cooker version I do on the stove, however, and alter the ratio of beans and hominy. Instead of 3 cans beans and 1 can hominy, I do 2 cans of both (or in my case, cooked from dry).

Here are some of my favorites from the ATK Slow Cooker Revolution cook book: Classic Weeknight Chili (modified from ATK Slow Cooker Revolution 1) link is to my blog (NO Adverts, pop-ups, etc, just a plain blogger blog). This one was awesome. We loved it. I'm making it again next week.
Made the chicken chili last week and we both loved it, thanks for posting! I added a can of diced tomatoes, black beans instead of the white beans, and upped the amount of cumin and chili powder. Will be in our regular rotation, and I think that it will be just as good without the chicken (for a vegetarian meal).

chatnoir --- I'm so glad you liked the recipe. Next time I make it, I'm going to omit the chicken --- I'm with you, a veggie version should be great too (and then I'm more likely to have the ingredients on hand). I might throw in some other veggies too.
