I scaled back the recipe to 3/4 cup uncooked rice, which I cooked last night. I had leftover broiled salmon that I flaked. I had no parsley or lemon juice and I left out the bay leaf and hard boiled eggs. I used a leek instead of onion and added some shredded cabbage from a pre-bagged slaw bag to add veggies. I used 1 tsp. cardamom powder and 2 tsp hot curry powder.
You can see this recipe is forgiving and even if mine isn't traditional, it was incredible. So much more than the parts. Love when that happens!
